A lightly sweetened seasonal meal prep breakfast that tastes just like Strawberry Rhubarb Crisp!
Strawberry Rhubarb Overnight Oatmeal
When my husband, son, and I play card games you can clearly see a distinct difference in our personalities just by looking at our cards. If you look at mine, they are organized numerically, by color, and lined up perfectly with each other. If you look at my husband’s, they are neat and organized by color but every now and then he has a number upside down and he doesn’t line them up with each other perfectly. And my son’s cards are a disaster!
As we play my husband has to constantly remind me that it’s my turn. That’s because I am too busy perfecting my cards instead of paying attention. Meanwhile my son has the time of his life and lights up the room with his laughter! It seems my husband and son have the perfect mix of the right approach. Somewhere in the middle – not perfect, just having fun!
I appreciate the balance and honesty they bring to my life. Just the other day my son asked me why I try so hard to make the pictures of the food I take so perfect? In his opinion, I should just take a picture of how we really eat it! Meaning, slopped onto paper plates, ha!

What You’ll Need for the Sauce:
- 1 cup Strawberries, Diced
- 1/2 cup Rhubarb, Chopped
- 1 tbsp Maple Syrup
- 1 tbsp Water
For the Oatmeal:
- 2/3 cups Old Fashioned Rolled Oats
- 1 tsp Ground Cinnamon
- 1 1/2 tbsp Brown Sugar
- 2/3 cup Almond Milk
And for the Crumb Topping:
- 2 tbsp Flour
- 2 tbsp Old Fashioned Rolled Oats
- 1 tbsp Sugar
- 2 tbsp Butter, Melted
How to Make Strawberry Rhubarb Overnight Oats
- Chop 1 cup strawberries and dice 1/2 cup rhubarb and place into sauce pan. Add 1 tbsp maple syrup and 1 tbsp water. Simmer over medium heat and stir frequently for about 10 minutes, then mash everything together. Cook additional 10 minutes, stirring frequently until the mixture thickens. Remove from heat and let cool. Once cooled, pour into container, seal, and refrigerate overnight.
- In a separate bowl, combine the oatmeal ingredients: 2/3 cups old fashioned rolled oats, 1 tsp ground cinnamon, and 1 1/2 tbsp brown sugar. Mix well and stir in 2/3 cup unsweetened vanilla almond milk. Pour into container, seal, and refrigerate overnight.
- Make the crumb topping by combining: 2 tbsp flour, 2 tbsp old fashioned rolled oats, 1 tbsp sugar, and 2 tbsp melted butter. Mix together until you have a crumbly mixture. Refrigerate overnight.
- In the morning, combine oatmeal and strawberry rhubarb mixture in a bowl. Sprinkle with crumb topping.
Recipe Notes:
- Mashing – When mashing the strawberries and rhubarb, just leave the mixture in the saucepan and mash with a pastry cutter.
- Crumb topping – Add the crumb topping just before eating, otherwise it will be too soft and get lost in the oatmeal. That light crunch in each bite really makes these overnight oats taste like a Strawberry Rhubarb Crisp!
- Granola – You could keep things easy and just sprinkle granola on your overnight oats instead of making the crumb topping!
