A delightful seasonal vegan breakfast to-go made with fresh peaches, cinnamon, and lightly sweetened with maple syrup!
Last night at 3:00am both my husband’s and my phone exploded with weather alerts. We were sooooo annoyed! My phone stays on silent, but I can still hear it vibrate. My husband doesn’t silence his otherwise he won’t hear his alarm. It just kept alerting us to point where we were wide awake. I was so mad. We had to be up in two hours! I laid there tossing and turning, trying to fall back asleep. I finally fell asleep, but when I woke up I felt like I didn’t get any sleep.
I am just coming off my summer slacker schedule and transitioning into our school year schedule. Thank.goodness! While slacking felt good for a little while, it started to make me feel tired and rushed. I was staying up too late watching just ‘one more episode,’ which lead into hitting the snooze ‘one more time’ in the morning, and skidding into work on two wheels ‘for the last time.’ I knew I needed to get more sleep than I was getting. It was affecting everything, every day, in a bad way. Including the quality of my breakfast!
But now, thanks to school starting, I am going to bed earlier and getting up earlier so I feel like myself again! So even though I woke up feeling like a train wreck, I was able to grab my ready-to-go Peach Crisp Overnight Oats. Breakfast was ready and waiting for me because I prepped them all for this week on Sunday… because I felt motivated from finally getting enough sleep!
Sleep, people. I am telling you – it is SO important!
What You Need to Make Peach Crisp Overnight Oats
- Fresh Peaches
- Maple Syrup
- Cinnamon
- Lemon Juice
- Old Fashioned Rolled Oats
- Unsweetened Vanilla Almond Milk
- Vanilla Extract
- Silk Vanilla Yogurt
- Cinnamon Granola
How to Make Peach Crisp Overnight Oats
- Add 2 cups of diced peaches, 3 tbsp maple syrup, and 1/2 tsp cinnamon to a sauce pan over medium heat. Let simmer and stir for 4-5 minutes or until peaches are tender.
- Remove from heat and stir in 1 tsp lemon juice.
- In a separate bowl, combine 2 cups Old Fashioned Rolled Oats, 2 cups Unsweetened Vanilla Almond Milk, 1 tsp vanilla extract, 3 tbsp maple syrup, and 1/2 tsp cinnamon.
- Divide the oats between 2 containers.
- Place a 1/4 cup dollop of Silk Vegan Vanilla Yogurt on top of the mixture in each jar.
- Distribute peaches evenly between each jar.
- Refrigerate overnight. Before eating, stir and generously sprinkle the top with cinnamon granola.
Tips for Making Peach Crisp Overnight Oats
- If you’d like, add toasted chopped pecans to the top instead of, or in addition to, the cinnamon granola.
- This recipe for Peach Crisp Overnight Oats isn’t very sweet. You may find you’d like to add additional maple syrup to the peaches and/or the oatmeal.
- You can also divide evenly between 4 containers instead of 2 for a small portion.
- Leaving the skins on is totally up to you! This recipe works with the skins on the peaches, or off.

- 1 tsp Cinnamon, Divided
