Vanilla Peach Overnight Oats
I am just coming off my summer slacker schedule and transitioning into a new school year. While slacking felt good for a little while, it’s time to get back into the swing of things!
When I want to be on top of things, I meal prep on Sunday so I am prepared for the week ahead. Even if I don’t know what else I am doing for meals, it’s always a guarantee to be able to meal prep some kind of overnight oats for breakfast. This week it’s going to be Peach Crisp Overnight Oats while peaches are still in season!
In the coming week’s I’ll be making some of my son’s favorite overnight oats, like Peanut Butter & Jelly Overnight Oats, Cinnamon Roll Overnight Oats, and Chunky Monkey Overnight Oats!
What You’ll Need for the Peaches:
- 2 cups Peaches, Peeled & Diced
- 3 tbsp Maple Syrup
- 1/2 tsp Cinnamon
- 1 tsp Lemon Juice
And the Oats:
- 2 cups Old Fashioned Rolled oats
- 2 cups Unsweetened Vanilla Almond Milk
- 1 tsp Vanilla Extract
- 3 tbsp Maple Syrup
- 1/2 tsp Cinnamon
- 1/2 cup Silk Vanilla Yogurt
- 1/2 cup Cinnamon Granola
How to Make Peach Crisp Overnight Oats
- Add 2 cups of diced peaches, 3 tbsp maple syrup, and 1/2 tsp cinnamon to a sauce pan over medium heat. Let simmer and stir for 4-5 minutes or until peaches are tender.
- Remove from heat and stir in 1 tsp lemon juice.
- In a separate bowl, combine 2 cups Old Fashioned Rolled Oats, 2 cups Unsweetened Vanilla Almond Milk, 1 tsp vanilla extract, 3 tbsp maple syrup, and 1/2 tsp cinnamon.
- Divide the oats between 2 containers.
- Place a 1/4 cup dollop of Silk Vanilla Yogurt on top of the mixture in each jar.
- Distribute peaches evenly between each jar.
- Refrigerate overnight. Before eating, stir and generously sprinkle the top with cinnamon granola.
Recipe Notes:
- Pecans – If you’d like, add toasted chopped pecans to the top of the oatmeal with the granola!
- Sweetness – This recipe isn’t very sweet. You may find you’d like to add additional maple syrup to the peaches and/or the oatmeal.
- Peaches – Peeling or leaving the skins on is totally up to you. This recipe works with the skins on the peaches, or off.
- Portions – For smaller portions, divide between 4 containers instead of 2.
