Blueberry Overnight Oats
When I first starting blogging I had to share recipes I could make ahead of time and take pictures of later, which meant I made a lot of overnight oats! At that time I was going into the office every day, so I was meal prepping my breakfast each week with different variations of this popular breakfast idea.
I discovered some of my favorites that way, like Peanut Butter & Jelly Overnight Oats, Strawberry Rhubarb Overnight Oats, Cinnamon Roll Overnight Oats, and these Blueberry Pie Overnight Oats!
What You’ll Need:
- 2 cups Old Fashioned Rolled Oats
- 1 1/2 cups Vanilla Yogurt
- 2 cups Almond/Soy Milk
- 4 tsp Cinnamon
- Homemade Blueberry Sauce
How to Make Blueberry Pie Overnight Oats
- Combine 2 cups Old Fashioned Rolled Oats, 1 1/2 cups vanilla yogurt, 2 cups vanilla almond/soy milk, and 4 tsp cinnamon. Mix well. Divide equally between 5 containers.
- In a sauce pan make the blueberry sauce by combining 1 cup blueberries, 1/4 cup water, 1 tbsp cornstarch, and 1/4 cup sugar. Stir to combine.
- Continue stirring over medium heat until sauce starts to form. Reduce the heat to low and keep stirring frequently for a minute or two until a thick sauce forms.
- Remove from heat and stir in 1 tbsp lemon juice.
- Once the sauce cools, distribute evenly between the containers. Seal and keep refrigerated.
Recipe Notes:
- Granola – I love to add my favorite granola to these oats, makes it taste like a crisp!
- Protein – To add protein, add chia seeds!
- Vegan – You can easily make this vegan with Silk Vanilla Yogurt.
- Serving – You can divide this between as many containers as you’d like, either to increase or decrease the daily serving.
