Best Strawberry Scones
Parental emotions are so unstable!
We recently dropped our son off at summer camp for the week. The days leading up to drop-off day my husband and I whispered amongst ourselves all of the things we were going to be able to do that we normally couldn’t do. Like going to a movie without notice or eating at restaurants that our son doesn’t like. Or eat ice cream in the living room while watching whatever we want. Gasp! We were ramping up to live on the edge!
But then the day came to leave him at camp for the first time and I had a really hard time leaving him there! I took 7,432 pictures and gave him 9,687 hugs all while my stomach was in knots from anxiety! Meanwhile, my husband was telling me I was embarrassing our son and that it was time for us to go. As I was sharing my experience with a friend she said it was a good thing my husband went with to drag me out of there otherwise I would have stayed until bedtime!
I am ridiculous.

What You’ll Need for the Scones:
- 2 1/2 cups Flour
- 2 tbsp Sugar
- 1 tbsp Baking Powder
- 1/4 tsp Salt
- 1/2 cup Butter, Cold
- 1 cup Strawberries, Chopped
- 2 Eggs
- 1/2 cup Heavy Whipping Cream
- 1 tbsp Milk
And the Icing:
- 2/3 cup Powdered Sugar
- 1 tbsp Milk

How to Make Strawberry Scones
- Preheat oven to 400 degrees.
- In a large bowl, mix together 2 1/2 cups flour, 2 tbsp sugar, 1 tbsp baking powder, and 1/4 tsp salt.
- Transfer into a food processor, then add in 1/2 cup diced cold butter. Pulse until you have coarse crumbs. Pour back into the bowl.
- Toss in 1 cup diced strawberries.
- In a separate small bowl, beat together 2 eggs and 1/2 cup heavy cream. Add the egg mixture to the flour mixture and gently stir until moistened. Be careful not to over mix.
- Place dough onto floured parchment paper. Pull dough together and shape into a circle about 3/4 inches thick. Cut into 8 equal wedges with a pizza cutter and pull them slightly apart.
- Brush the top of each slice with milk and sprinkle with sugar.
- Slide parchment paper with scones onto a baking sheet and bake for 15 minutes.
- Once cooled, combine 2/3 cup powdered sugar and 1 tbsp milk. Drizzle over tops of the scones.
