Vegan Cinnamon Roll Overnight Oats
Lately, one of the best sounds that comes from my kitchen is my son’s laughter. He and my husband have been playing card games at the kitchen table while I make supper. They give each other such a hard time, the laughter just billows from the table. And I love it! They keep score with little army guys. Each game one of them wins they add an army guy to their line up like they are battling, with each of their winning tally’s (army guys) on their side of the table. It’s hilarious!
The other night, while my son wasn’t looking, my husband grabbed 3 Lego dinosaurs and made it look like an attack on his army guys. There were guys hanging out of the dinosaurs mouths, getting stomped on, and others ‘running’ for their lives! I cherish this time together as a family, I wish time would slow down.

What You’ll Need:
- 1/2 cup Vegan Vanilla Yogurt
- 1/2 cup Old Fashioned Rolled Oats
- 1/2 cup Vanilla Almond Milk
- 3 tsp Brown Sugar
- 1 tsp Cinnamon
- 1 tsp Vegan Cream Cheese
- 3 tbsp Powdered Sugar
How to Make Cinnamon Roll Overnight Oats
- Combine 1/2 cup vegan vanilla yogurt, 1/2 cup Old Fashioned rolled oats, 1/2 cup vanilla almond milk, 3 tsp brown sugar, and 1 tsp cinnamon and stir until smooth.
- In a small bowl beat together 1 tbsp softened vegan cream cheese and 3 tbsp powdered sugar until creamy. Add to oat mixture.
- Cover and chill in the refrigerator overnight.
Recipe Notes:
- Meal prep – This recipe is for one serving, but when I meal prep I make enough to fill 5 servings for the week. I set out 5 containers and add the ingredients like an assembly line. Then I have breakfast done for the week to come! It doesn’t take long at all, and it saves me a lot of time during the week.
- Icing – I just put 5 servings of cream cheese and 5 servings of powdered sugar in a bowl and mix together. Then I divide equally between the 5 containers.
- Substitute – You don’t have to make your overnight oats vegan; you can easily swap for dairy products.
