This Strawberry Shortcake is a classic summer dessert made with tender biscuits, juicy sweetened strawberries, and fluffy whipped cream! It’s simple to prepare, highlights fresh strawberries beautifully, and makes the perfect seasonal treat!
A Classic Strawberry Shortcake Everyone Loves!
I once attempted to make biscuits and failed. To make matters worse, it was my third baking fail of the day! So I called the big guns – my Grandma!
She made a fresh batch of Homemade Fluffy Biscuits so I could make this Strawberry Shortcake for you! I just love and appreciate her so much!
Why this Recipe Works:
- Shortcake is Sturdy but Tender – The base is soft enough to absorb the strawberries and creamy, yet sturdy enough to hold its shape, so the dessert doesn’t collapse or turn soggy too fast.
- Easy to Assemble, Perfect for Serving – I strongly recommend keeping the biscuits and strawberries separate until serving. This ensures the best texture and flavor, making this classic summer dessert ideal for gatherings!
- Simple Ingredients, Classic Results – Each part uses familiar, reliable ingredients that work together naturally, making this recipe approachable while delivering bakery-style flavor.
- Uses Fluffy Biscuits Instead of Cake – This allows the biscuits to soak up the strawberry juice slowly so it doesn’t become soggy.
Have fresh picked strawberries to use? Everyone loves Strawberry Crisp, Strawberry Freezer Jam, and Strawberry Pretzel Salad, too!
Ingredients You’ll Need:
- Homemade Fluffy Biscuits – The foundation of classic Strawberry Shortcake!
- Fresh Strawberries – I recommend using fresh berries, but frozen will work in a pinch. These are the star of the show and fresh berries add a natural sweetness, bright flavor, and juiciness. Chopping the berries help release their juice, creating a beautiful syrup.
- Cool Whip – Make sure to thaw the Cool Whip in the refrigerator before using. You could also use whipped cream, either homemade or store bought.
How to Make Strawberry Shortcake
NOTE: Make biscuits ahead of time. Need to save time? You can buy store bought biscuits, or bake pre-made dough like Pillsbury Grands Biscuits.
- Cut a biscuit in half and set aside.
- Clean, hull, and dice desired number of fresh strawberries. I like to use a biscuit cutter to chop them up, it brings the juice out of the berries!
- Lay strawberries over half of the biscuit. Top with a dollop of whipped cream or Cool Whip. Top with other half of biscuit. Enjoy right away!
My Best Tips:
- Use Ripe, In-Season Strawberries – The flavor of Strawberry Shortcake depends heavily on the berries. Fully ripe strawberries are sweeter, juicier, and create a better syrup when sweetened.
- Assemble Just Before Serving – Keep the biscuits, strawberries, and whipped cream separate until serving.
- Make Whipped Cream Fresh – Fresh whipped cream has better flavor and texture than store-bought and keeps the dessert light instead of overly sweet.
