Simple Granola Recipe
For many years the idea of self care made me feel guilty. I know, it sounds crazy. As much as I tried to overcome the guilt of taking care of myself, I couldn’t find a way to make it happen. I had come to accept that I just didn’t have it in me to put myself first because putting others first is what makes me happy.
That was… until last year. It all started when I became tired of my clothes and desperate for a change. I like to try clothes on before I buy them and the pandemic closed the fitting rooms. So I figured I would take a chance at ordering a few things online. I’ve never been one to spend a lot of money on myself, but that day I splurged. Everything that I ordered fit perfectly – and I felt amazing! I instantly felt like I had it together AND I was comfortable!
Buying new clothes and giving my closet a complete makeover over the course of the past year has really, really changed how I look at myself. I like myself more now and I have been looking for other ways to take better care of me and still not feel guilty about it. Like getting a massage once a month – I wish I would have started doing that a loooong time ago! And instead of feeling like I need to get all of my steps in at once I have cut the chains off my desk and move a lot more freely throughout the day!

What You’ll Need:
- 2 cups Old Fashioned Rolled Oats
- 3/4 cup Shredded Sweetened Coconut
- 1/2 cup Slivered Almonds
- 1/3 cup Pepitas
- 1 tsp Cinnamon
- 1/4 tsp Salt
- 4 tbsp Coconut Oil
- 1/2 cup Maple Syrup
- 1 tsp Vanilla
- 1/4 tsp Coconut Extract
How to Make Coconut Granola
- Preheat the oven to 300 degrees. Line a large baking sheet with parchment paper and set aside.
- In a large bowl combine 2 cups old fashioned rolled oats, 3/4 cup shredded sweetened coconut, 1/2 cup slivered almonds, 1/3 cup pepitas, 1 tsp cinnamon, and 1/4 tsp salt.
- In a small bowl combine 4 tbsp melted coconut oil, 1/2 cup maple syrup, 1 tsp vanilla extract, and 1/4 tsp coconut extract. Pour mixture over dry ingredients and stir until well coated.
- Pour the granola onto the prepared baking sheet. Spread evenly.
- Bake for 30 minutes or until granola is golden brown, stirring every 10 minutes.
- Let granola cool completely.
How to Use Granola:
- Eat as cereal and just pour milk over it. Add berries if you’d like!
- Sprinkle on top of Peach Crisp Overnight Oats.
- Use it in a Healthy Blueberry Yogurt Breakfast Parfait.
- Mix into ice cream.
- Use it in Trail Mix.
- Eat it plain as a healthy snack.
- Sprinkle it in your yogurt.
- Use in an Acai Bowl.
