Rhubarb Cake with Vanilla Sauce
We recently experienced some bad storms. Normally my son enjoys a good storm like I do, but this time we were about 20 minutes from a tornado and he was very scared. We were driving in the opposite direction of it, heading home. The skies were very dark, the thunder was loud, and the lightening was eerie.
He wanted to pray right away in the car for our safety. Then the tornado siren went off just as we were getting home so my husband grabbed a lantern, we went downstairs, and turned on the news. Not too long after we snuggled in, the electricity went out. That really scared him, he clung to me, and wanted to pray again. This time he said he was just going to talk to God like a friend.
I feel like a failure most days. I’ve made so many mistakes, I have regrets, and I wish for do-overs. But that night I got to see that my son turned to God when he was scared. He found comfort in his friendship with God. He had faith that God would keep us safe in that storm.
I’ve been through more pain, loss, conflict, grief, trials, battles, and storms then I will ever feel comfortable sharing and through them all I prayed. It was my only hope and gave me the strength that I needed. And along the way, I’ve tried my very best to be a faithful example to my son. If there is one thing he learns from me, I want it to be the importance of having a relationship with God.
This life isn’t easy and it’s only going to get harder as Jesus’ return nears. It is my prayer that my son always turns to God, that he never stops praying, that he believes in God’s promises to us, and that he always has a childlike faith in Christ.

This Rhubarb Streusel Cake with Warm Vanilla Sauce is so delightful! It’s light and fluffy with a sweetened streusel topping and a warm vanilla sauce dripping over every bite!

What You’ll Need for the Cake:
- 2 tbsp Butter, Softened
- 1 cup Sugar
- 1 Egg
- 2 cups Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 cup Buttermilk
- 2 cups Rhubarb, Chopped
The Streusel:
- 1/2 cup Flour
- 1/2 cup Sugar
- 4 tbsp Butter, Melted
And the Warm Vanilla Sauce:
- 1/2 cup Butter
- 3/4 cup Sugar
- 1/2 cup Evaporated Milk
- 1 tsp Vanilla
Rhubarb Streusel Cake with Warm Vanilla Sauce
- Preheat oven to 350 degrees. Spray a 9 x 9 pan with non-stick spray and set aside.
- In a large bowl, cream together 2 tbsp softened butter and 1 cup sugar. Beat in 1 egg.
- In a small bowl, whisk together 2 cups flour, 1 tsp baking powder, and 1/2 tsp baking soda. Pour into the creamed butter and sugar. Pour in 1 cup buttermilk and beat together until just combined.
- Fold in 2 cups chopped rhubarb.
- Spread batter evenly into the pan.
- In a small bowl, make the streusel by mixing together 1/2 cup flour, 1/2 cup sugar, and 4 tbsp melted butter until crumbs form. Sprinkle evenly over the batter.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Make the sauce by melting 1/2 cup butter in a saucepan over medium heat. Add in 3/4 cup sugar, 1/2 cup evaporated milk, and 1 tsp vanilla. Bring to a boil and stir constantly until slightly thickened.
- Remove from heat and serve warm over the cake.
