A delicious summer dessert featuring fresh strawberries, rhubarb, and a scoop of vanilla ice cream!
Strawberry Rhubarb Dump Cake with Jello
Every first and third Saturday of the month we have potluck following our church service. It’s where I’ve gotten some of my favorite recipes, including this easy Strawberry Rhubarb Dump Cake!
I had never heard of it, or had it before, and two of the people I was sitting with were sharing their experience with it. One had made it with just the strawberries and the other adds rhubarb to it. Then they both explained the easy steps to make it so I knew I had to try it!
I am at the tail end of using up the last of my fresh strawberries. We’ve tried a lot of new recipes with them including Strawberry Lemonade, Strawberry Scones, and Strawberry Syrup!
What You’ll Need:
- 4 cups Rhubarb, Chopped
- 2 cups Strawberries, Sliced
- 3/4 cup Sugar
- 1 (3 oz) package Strawberry Jello
- 1 (15 oz) box Yellow Cake Mix
- 1/2 cup Butter, Melted
- 1 cup Water
How to Make Strawberry Rhubarb Dump Cake
- Preheat oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray.
- Dice enough rhubarb to make 4 cups and pour into bottom of the pan. Then sprinkle 1/2 cup sugar over the rhubarb.
- Hull and slice enough strawberries to make 2 cups and pour over the rhubarb. Then sprinkle 1/4 cup sugar over the strawberries.
- Shake dry strawberry Jello powder evenly over the strawberries.
- Sprinkle 1 (15 oz) box dry yellow cake mix evenly over the rhubarb and strawberries.
- Drizzle 1/2 cup melted butter evenly over the cake mix.
- Then drizzle 1 cup water over the cake mix.
- Do not mix or stir, just leave as is. Bake for 45 minutes.
When to Go Strawberry Picking
Strawberries grow in the month of June, sometimes into early July in Central Wisconsin. If you want fresh locally grown strawberries, here are a few options:
- Farmer’s Market – You can save time by buying them from your local Farmer’s Market. The best time to watch for them is early June to early July.
- Pre-picked – You can also save time by calling your local strawberry field and ask them if they have any pre-picked strawberries available. It’s best to do this early in the season and early in the morning just as they open for the day. This route is more expensive, but it does save time.
- Pick yourself – This is our favorite option! It’s a great experience for your family, especially the kids. They usually eat more than they pick! Here are my recommendations for successful strawberry picking:
- Call first – Sometimes they aren’t open for picking to allow the strawberries to ripen.
- Go early – Summer mornings are cooler than the days. Go as early as they open so you don’t get torched in the sun! Plus that leaves you time to clean them when you get home.
- Comfort – Dress comfortably in ‘yard work’ clothes. And if your back gets sore quickly from bending over, bring something to kneel on.
- Washing – Wash and hull the berries right before you are ready to use them. If you need to store them, don’t wash them. Keep them in the refrigerator until ready to use. Washing them too soon before using will make them soggy and they’ll go bad quicker.
