Easy Rhubarb Bread
We recently went to dinner and Chalk Fest in our quaint little down town area. It’s become a family tradition that we look forward to every summer!
On the way home I thought I saw an Eagle flying over us but as it got closer I realized it wasn’t. I then said, “I am not very good at birding.” My husband got a good chuckle out of the word ‘birding,’ because he had never heard of that. I told him it meant bird watching, but he wouldn’t accept it as a word. He said, “That’s like calling people watching, peopling.”
Touche, however, the English language is quirky and that’s just the way it is! Of course I had to look it up the definition and really drive it home that I was right. He reluctantly agreed and we got a good laugh out of it!

What You’ll Need:
- 1 cup Milk
- 1 tbsp Lemon Juice
- 1 1/2 cups Brown Sugar
- 2/3 cup Oil
- 1 tsp Vanilla
- 1 tsp Baking Soda
- 2 1/2 cups Flour
- 1 1/2 cups Rhubarb, Diced
- 1 tbsp Butter, Melted
- 1/2 cups Sugar

How to Make Rhubarb Bread
- Preheat oven to 350 degrees. Spray a bread pan with non-stick spray and set aside.
- In a small bowl, combine 1 cup milk and 1 tbsp lemon juice and set aside.
- Dice 1 1/2 cups rhubarb and set aside.
- In a medium size bowl, combine 1 1/2 cups brown sugar, 2/3 cup oil, milk mixture, 1 tsp vanilla, 1 tsp baking soda, and 2 1/2 cups flour. Mix together well then stir in 1 1/2 cups diced rhubarb.
- Pour batter into prepared pan and spread evenly.
- Melt 1 tbsp butter and combine well with 1/2 cup sugar. Sprinkle over the top of the bread evenly and bake for 60-75 minutes or until a toothpick inserted in the middle comes out clean. Note: The bread may require additional baking time. You will need to check the bread a few times with a toothpick to make sure you don’t under or over bake.
Recipe Notes & Substitutions:
- Milk – You can use your milk of choice.
- Lemon juice – You can also substitute the lemon juice for vinegar.
- Loaf size – You can easily divide the batter between two bread pans and bake for 50-60 minutes, or until a toothpick inserted into the middle comes out clean.
- Baking time – This loaf of bread requires quite a bit of baking time. Set the timer for 60 minutes and check the bread. You’ll likely need more time, but ovens vary so it’s good to check on it as it bakes for the last 5-10 minutes to make sure you don’t under or over bake it. As the baking time nears the end, just check the bread by sticking a toothpick in the center of the loaf. You may have to do this a few times just to make sure the bread is baked all the way through!
