Simple Rhubarb Pie
My heart hangs on my sleeve, so I randomly get emotional about things that wouldn’t make a normal person cry. One Sunday I was in the kitchen making Strawberry Rhubarb Overnight Oats and my husband and son were downstairs.
When I went downstairs I found them building with Lincoln Logs and playing with cars. I stopped in my tracks, my husband and I made eye contact, and my eyes started welling up with tears. The shocked look on my son’s face from my random tears was enough to make me laugh myself out of sobbing! I told my husband that he is a good Dad, he smiled, and I went on my way.
Life is good, especially when you are eating a slice of Fresh Rhubarb Pie, Strawberry Rhubarb Streusel Cheesecake Bars, or Rhubarb Dream Bars!

What You’ll Need to Make the Pie Crust:
- 2 cups Flour
- 1 cup Butter Flavored Crisco
- 1 tsp Salt
- 3-4 tbsp Cold Water
And the Fresh Rhubarb Pie Filling:
- 4 cups Rhubarb, Chopped
- 1 1/4 cup Sugar
- 1/4 cup Flour
- Dash of Salt

How to Make the Pie Crust
- Preheat oven to 400 degrees.
- Combine 2 cups flour, 1 cup butter flavored Crisco, and 1 tsp salt.
- Gently stir in 3-4 tbsp cold water.
- Divide mixture in half. Place first half on well floured surface and roll out with a rolling pin. Lightly place into a pie pan and gently press to form.
- Place second half of mixture on well floured surface and roll out with a rolling pin. Set aside.
How to Make Fresh Rhubarb Pie Filling
- Cut 4 cups rhubarb in 1″ pieces and set aside.
- In a separate bowl, combine 1 1/4 cup sugar, 1/4 cup flour, and a dash of salt. Toss rhubarb in the mixture and let stand for 15 minutes.
- Fill the crust with the mixture.
- Top mixture with a few slabs of butter.
- Brush edges of pie crust with water. Place top crust over filling.
- Press edge of crust together with a floured finger or press together with a fork.
- Brush the top crust with melted butter. Sprinkle sugar on top.
- Bake at 400 for 20 minutes.
- Adjust the oven temperature to 375 degrees and bake for 20-35 more minutes. (The pie is done when the crust starts to turn golden brown.)

Recipe Notes:
- Boiling over – To avoid a mess if the pie runs over in the oven, put a large piece of foil (shiny side up) under the pie.
- Even cooling – Place the pie on a cookie rack after removing from the oven to allow even cooling.
- Crisco – If you’d prefer, you can substitute the Crisco with butter.
- Serving – Allow the pie to complete cool before cutting and serving. This gives it time to set.
