A simple to make soft and chewy sugar cookie that is bright and cheery for a fun Spring, Easter, or birthday treat!

Chewy Sugar Cookies
The sanding sugar is so bright and beautiful on these Spring Blossom Cookies that it caught the attention of my niece right away! They were sitting on my counter and she just had to take some home with her. Especially the pink ones!
These cookies taste absolutely amazing. It is impossible to stop at one! They are so soft and so chewy, everything a sugar cookie should be!
What really gets me excited about these are the Birthday Cake Hersey Kisses! I saw them at Target and I just had to get a bag. I didn’t know what I was going to do with them until my son assumed I was going to use them to make the same cookies I make at Christmas time – Peanut Butter Blossoms. It was a genius idea!
These are such happy cookies and would be perfect to make for Spring time, Easter, or a birthday party!

What You’ll Need:
- 1 cup Sugar
- 3/4 cup Salted Butter, Softened
- 1 Egg
- 1 tsp Vanilla
- 2 1/4 cup Flour
- 1 tsp Baking Soda
- Bright Colored Sanding Sugar
- 24 Birthday Cake Hersey Kisses, Unwrapped

How to Make Spring Blossom Cookies
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper and set aside.
- Unwrap Birthday Cake Hersey Kisses at set aside.
- Beat together 1 cup sugar, 3/4 cup salted softened butter, 1 egg, and 1 tsp vanilla.
- In a separate bowl, combine 2 1/4 cup flour and 1 tsp baking soda.
- Pour into the creamed mixture and beat together until cookie dough forms.
- Shape into 1 inch balls and roll into bright colored sanding sugar and place on prepared baking sheet.
- Bake for 7 minutes.
- Remove from the oven and immediately place Kisses into the center of the cookies.
- Let cool completely so the Kisses set before serving.
