Homemade Strawberry Ice Cream
I’ve never been disappointed with a strawberry picking season before, until this summer! We’ve gotten so much rain that most of the berries are mushy and tasteless. My parents tried two different patches and found one to be better than the other, but it still wasn’t what we are used to. I usually pick at least 3 flats and this year I was lucky to get 1!
About the only thing I can do with them is turn them into Strawberry Lemonade, Strawberry Freezer Jam, Strawberry Smoothie Bowls, and this No Churn Strawberry Ice Cream!
What You’ll Need:
- 2 cups Heavy Whipping Cream
- 2 cups Strawberries, Chopped
- 1 tbsp Lemon Juice
- 1 (14 oz) can Sweetened Condensed Milk
How to Make No Churn Strawberry Ice Cream
- Set a bread loaf pan aside.
- In a large mixing bowl, beat 2 cups heavy whipping cream until stiff peaks form.
- In a separate bowl, mash 2 cups strawberries with 1 tbsp lemon juice using a potato masher.
- Fold 1 (14 oz) can sweetened condensed milk and mashed strawberries into the whipped cream until just combined.
- Pour mixture into the bread loaf pan, randomly garnishing with additional chopped strawberries if desired.
- Freeze for at least 8 hours.
