Old Fashioned Baked Sticky Rhubarb Pudding
A friend of mine shared this delicious recipe for Baked Sticky Rhubarb Pudding. As I enjoyed a piece, I started thinking of all of the different fruit over the growing season that I could use as a reason to keep making this! Whether you have a piece right out of the oven or the next day, it consistently slows you down as you savor a piece! I love the thick crunchy top layer combined with the soft cake-like center and the juicy rhubarb all in one bite – it’s sooooo good!!
This recipe tastes great just the way it is, but it would really be a home run with a scoop of vanilla ice cream or whipped topping!

What You Need to Make Sticky Peach Pudding
- 3 cups Rhubarb, Chopped
- 1 cup Flour
- 2/3 cup Sugar
- 1 tsp Baking Powder
- 1/3 cup Milk
- 2/3 cup Butter, Melted
- 1 cup Powdered Sugar
- 1 tbsp Cornstarch
- 1 cup Water

How to Make Baked Sticky Peach Pudding
- Preheat oven to 350 degrees. Spray 8 x 8 pan with non-stick spray and set aside.
- Chop enough rhubarb to equal 3 cups and spread evenly into the bottom of the pan.
- In a bowl, whisk together 1 cup flour, 2/3 cup sugar, and 1 tsp baking powder.
- Add in 1/3 cup milk and 2/3 cup melted butter and mix until well combined.
- Once the mixture is smooth, pour over rhubarb and spread evenly.
- Whisk together 1 cup powdered sugar and 1 tbsp cornstarch in a separate bowl and sprinkle evenly over the batter.
- Pour 1 cup water over the top.
- Bake for 1 hour.
