Vegan Apple Pie Overnight Oats
I’m not sure how it happened, and as a baker I probably shouldn’t admit this… but I don’t like pie. I’ve only made an apple pie once; I’ll most likely never make another one. It’s just not my thing. I like graham cracker crusts, but not traditional pie crust.
Now the smell of pie gets me excited. Especially my Grandma’s Easy Apple Pie!
These Apple Pie Overnight Oats are everything I want in an apple pie – the filling without the crust! And for breakfast? Yes, please! If you like pie for breakfast too, then make sure you alternate with these Blueberry Pie Overnight Oats!
What You’ll Need:
- 4 Apples (Sliced, Cored, Peeled & Diced)
- 2 tbsp Vegan Butter
- 2 tsp Cinnamon
- 4 tbsp + 3 tbsp Maple Syrup
- 1 cup Rolled Oats
- 2 containers Silk Vanilla Yogurt
- 1 1/3 cup Unsweetened Vanilla Almond Milk
- 2 tbsp Chia Seeds
- 1 tsp Vanilla
How to Make Apple Pie Overnight Oats
- Slice, core, peel, and dice 4 apples. Combine with 2 tbsp butter, 2 tsp cinnamon, and 4 tbsp maple syrup in a sauce pan over medium heat until the apples are tender. This will take about 5-7 minutes. Remove from the heat and let cool.
- Combine 1 cup rolled oats, 2 containers of Silk vanilla yogurt, 1 1/3 cup unsweetened vanilla almond milk, 2 tbsp chia seeds, 1 tsp vanilla, and 3 tbsp maple syrup in a large bowl.
- Divide oatmeal into 5 separate containers. Top with apples, distributing evenly.
- Cover each container and keep refrigerated. Stir apples into oatmeal before eating.
Recipe Notes & Substitutions:
- Dairy-free – I make all of my overnight oats dairy-free, but you don’t have to. You can easily swap and use regular dairy products!
- Serving size – This recipe makes 5 servings. So make sure to adjust accordingly if you want to try it first before committing to having it 5 times this week!
- Temperature – I was once skeptical about making overnight oats. Cold oatmeal just didn’t seem like a warm and fuzzy way to start a cold day. But, have no fear! You can eat them cold right out of the refrigerator OR you can warm them up in the microwave.
