Gingerbread Snowflakes
To keep our perspective, spending, and gifting in check, we are often reminded of the real reason for this season. But there is one other reason I like to remind myself of, which I like to call, ‘we always.’
When you ask people about their Christmas plans they start with, ‘we always.’ We always go to Grandma’s for Christmas dinner, we always drive around and look at the lights together, we always cut down our Christmas tree the day after Thanksgiving, we always have the grandkids over to watch our favorite Christmas movies, we always leave cookies out for Santa, we always go sledding and then have hot cocoa, we always donate our kids unused toys, we always write Santa a letter, we always decorate sugar cookies together… you get my point.
In all of those examples, ‘we’ refers to being together as a family. Whether everyone in the family feels like they have time or not, they stop what they are doing and they follow through on all of their Christmas traditions together.
And, ‘always’ means every single year. Not even a blizzard will keep families from keeping their traditions during the holiday season.
My Christmas wish for everyone is to be intentional about making and keeping family traditions throughout the entire year, not just at Christmas time. Traditions are what we love about Christmas, right?! Let’s spread that love throughout the rest of the 11 months we have, no excuses. Deal?!
As you sit down with your family and decide what new traditions to start, make sure to have some Crock Pot Christmas Crack, Rolo Pretzel Turtles, Sugar Cookie Fudge, and Butter Toffee Pretzels ready for snacking! You know it’s going to be a long night sorting through all of the ideas!
What You’ll Need for the Cookie Dough:
- 1 cup Butter, Softened
- 1 cup Sugar
- 1 Egg
- 1 cup light Molasses
- 2 tbsp White Vinegar
- 5 cups Flour
- 1 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 2 tsp Ground Ginger
- 1 tsp Ground Cinnamon
- 1 tsp Ground Cloves
And the Icing:
- 3 cups Powdered Sugar
- 4 tbsp Milk
- 2 tbsp Light Corn Syrup
How to Make Gingerbread Snowflake Cookies
- Add 1 cup softened butter and 1 cup sugar to a large bowl and beat until well combined and fluffy. Add 1 egg, 1 cup light molasses, and 2 tbsp white vinegar and beat until well combined. The mixture will look curdled.
- In a separate medium size bowl, whisk together 5 cups flour, 1 1/2 tsp baking soda, 1/2 tsp salt, 2 tsp ground ginger, 1 tsp ground cinnamon, and 1 tsp ground cloves. Then pour into the wet batter and beat until well combined.
- Refrigerate dough for 1 hour.
- When the dough is done chilling, preheat oven to 350 degrees.
- Working in sections, roll the dough to 1/2 inch thick on floured countertop.
- Cut into snowflake shapes. You could also make Gingerbread Cookies!
- Place onto parchment paper lined baking sheet and bake for 9-11 minutes. Let cookies cool on the pan for 5 minutes, then transfer to a cooling rack.
- Repeat with remaining dough.
- Once cooled, make the icing by beating together 3 cups powdered sugar, 4 tbsp milk, and 2 tbsp light corn syrup. The icing is the thickness you need when it drips off the beaters and holds its shape for several seconds before dissolving back into the rest of the icing. If it’s too thick, add a little milk. If it’s too thin, add a little powdered sugar.
- Transfer to a piping bottle and draw desired designs onto the cookies.
