Old Fashioned Peach Crisp
I’ve had more than my fair share of stressful events over the past several months. Most recently we had to unexpectedly replace my husband’s truck. It’s been a very long time since we’ve had to purchase a car and things have changed so much, especially prices! Used cars now have new car price tags.
Having to buy a car versus wanting to buy one are two completely different experiences. When you have to buy one, there are so many factors that cause extra pressure and stress! We have to choose from what’s available instead of having the privilege of waiting for what we want.
We started praying about it right away. The first two trucks we were interested in fell through, so by the time we reached the third one we were skeptical. But we were not disappointed! It was like finding a unicorn! We found an affordable used truck with low miles in immaculate condition! The second the seller opened the garage my husband and I looked at each other, beaming with relief and excitement!
When it was all over and life was falling back into place my husband and I agreed we had an answer to prayer better than we could have imagined. As we were talking I told him I was so glad the stress was over… but who am I kidding?! There will always be stress! Always. It comes and goes in different forms, but life will always have challenges. I am grateful for a God who cares about my stress, gives me strength to get through it, and never leaves my side!

What You’ll Need:
- 5 cups Peaches, Sliced
- 1/2 cup Sugar
- 2 tbsp Cornstarch
- 1/2 tsp Vanilla
- 1 tbsp Lemon Juice
- 1/2 cup Flour
- 1/2 cup Brown Sugar
- 1 tsp Cinnamon
- 1/2 cup Butter, Cold & Cubed
- 3/4 cup Old-Fashioned Rolled Oats

How to Make Peach Crisp
- Preheat oven to 350 degrees. Spray a pie pan with non-stick spray and set aside.
- Pit, peel, and slice enough peaches to equal 5 cups and pour into a medium size bowl.
- Stir in 1/2 cup sugar, 2 tbsp cornstarch, 1/2 tsp vanilla, and 1 tbsp lemon juice.
- Pour peach mixture into the prepared pan.
- Pulse together 1/2 cup flour, 1/2 cup brown sugar, and 1 tsp cinnamon in a food processor. Then pulse in 1/2 cup cold, cubed butter until crumbs are formed. Then gently pulse in 3/4 cup old-fashioned rolled oats.
- Pour mixture over the peaches in the pan.
- Bake for 30-35 minutes, or until golden brown.
