Christmas Cookie Bars
Do you know what you are leaving for Santa to have with his milk yet? Our Santa loves peanut butter, so we are going to leave him some of these Peanut Butter Cookie Bars! That’s if they make it that long.
There is just something about Christmas treats, they are irresistible! It’s impossible to stop eating them! Especially when they are made with peanut butter. Like this Chocolate Peanut Butter Fudge, these 2-Ingredient Peanut Butter Cup Cookies, and my all-time favorite Peanut Butter Blossoms!
Your house will be Santa’s first AND last stop if you leave him some of Santa’s Peanut Butter Cookie Bars with a glass of milk!

What You’ll Need:
- 1 1/2 cups Flour
- 1 cup Old-Fashioned Oats
- 3/4 tsp Baking Soda
- 1/2 cup Butter, Softened
- 1/3 cup Peanut Butter
- 1/2 cup Sugar
- 1/2 cup Brown Sugar
- 1 tsp Vanilla
- 1 Egg + 1 Egg Yolk
- 1 cup Mini Chocolate Chips
- 1 cup Christmas Peanut Butter M&M’s
- Christmas Sprinkles

How to Make Santa’s Peanut Butter Cookie Bars
- Preheat the oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray and set aside.
- In a small bowl, whisk together 1 1/2 cups flour, 1 cup old-fashioned roll oats, and 3/4 tsp baking soda.
- In a large bowl, cream together 1/2 cup softened butter, 1/3 cup peanut butter, 1/2 cup sugar, and 1/2 cup brown sugar until fluffy. Add in 1 tsp vanilla, 1 egg, and 1 egg yolk. Beat together until smooth.
- Mix dry ingredients into the wet ingredients until just combined.
- Stir in 1 cup mini chocolate chips and 1 cup Christmas Peanut Butter M&M’s.
- Press evenly into prepared pan.
- Sprinkle top of bars with Christmas sprinkles and gently press into the dough.
- Press additional M&M’s into the top of the mixture if desired.
- Bake for 14-16 minutes, or until the edges are slightly golden.

Tips:
- Don’t over bake – Be careful not to over bake the bars. They will look slightly underdone when you remove them from the oven. That’s okay! Let the bars cool in the pan and they will firm up nicely. Over baking will cause them to be dry.
- M&M’s – If you would like to give the bars a prettier, fuller look you can press additional M&M’s into the tops of the bars. If you put them in the dough before baking, they will likely crack. If you would like a cleaner look, press them into the dough as soon as you remove them from the oven.
