Chocolate Mint Cookies Made with Cake Mix
My husband has always been one of my biggest cheerleaders. From my early days of blogging to now, he is always putting a good word in for me whenever he talks to someone. Today he came home and said the lady who cut his hair loves my blog! I love how excited he gets sharing my recipes. He is proud of me and it makes me blush.
In the early days of blogging my pictures were absolutely terrible, I had no idea what I was doing. He had no shame. He tried getting me to make every form of advertisement he could thing of! I wouldn’t do it because I didn’t feel I had much value to offer.
But he didn’t feel that way at all. He saw the hard work I put into it and he strongly felt it didn’t matter what my pictures looked like because my recipes were good. His faith in me made me I believe I could eventually get my website where I wanted to be.
A few years ago we decided it was time to invest in a new look, branding, etc. When we got this website’s first draft back he cried tears of joy with me. He was so happy for me! I love him so much for believing in me. He had enough faith for both of us when I didn’t think I could do it.

What You’ll Need:
- 1 box Chocolate Cake Mix
- 2 Eggs
- 1/2 cup Oil
- 1 cup Chocolate Chips
- Andes Mints
- Andes Mint Baking Chips
How to Make Andes Mint Cake Mix Cookies
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- Combine 1 box of chocolate cake mix, 2 eggs, and 1/2 cup oil and mix well. Stir in 1 cup chocolate chips.
- Scoop 1 inch balls and place onto the prepared pan.
- Bake for 10 minutes.
- After removing from the oven, immediately place an unwrapped Andes Mint on the top of each cookie. Let stand for 5 minutes, then spread each melted mint over the center of each cookie.
- Sprinkle Andes Mint Baking Chips over the melted Andes Mint.
- Let cool long enough for the chocolate to set.
