Easy Chinese Beef and Broccoli Recipe
My husband and I have an ongoing mini-golf battle. I pretty much always win, well except for the times I don’t. But we don’t keep track of those!
I had a long winning streak until last summer. I lost, and I lost bad – by 3 points! I changed my strategy for a certain win and it was a big fail. I’ll never do that again!
We haven’t played against each other since and have been smack talking ever since. I have been looking forward to my come back and last night I finally had my chance. I won by 1 point! Sweet victory, baby!
Now the rightful owner has the non-existent trophy again!
Speaking of victory, if you need to get dinner on the table in 30-minutes then give this Vegetarian Beef and Broccoli a chance! And be sure to keep these Vegetarian Sloppy Joe’s, Vegetarian Sheet Pan Quesadilla’s, and Taco Salad Bowls in the queue, too!
What You’ll Need:
- 2 cups White Rice
- 1/4 tsp Ground Ginger
- 2 tsp Garlic
- 1/2 cup Hot Water + 2 tbsp Water
- 6 tbsp Bragg’s Amino Acids
- 3 tbsp Brown Sugar
- 1 1/2 tbsp Corn Starch
- 2 tbsp Sesame Oil
- 2 tbsp Vegetable Oil
- 1 (12 oz) bag Broccoli Florets
- 1 (10 oz) bag Beyond Meat Steak
- Sesame Seeds, Optional
How to Make Vegetarian Beef & Broccoli
- Start cooking 2 cups of white rice so it’s ready when the beef and broccoli are done.
- Whisk together 1/4 tsp ground ginger, 2 tsp garlic, 1/2 cup hot water, 6 tbsp Bragg’s Amino Acids, 3 tbsp brown sugar, 1 1/2 tbsp corn starch, and 2 tbsp sesame oil to make the sauce and set aside.
- Add 1 (12 oz) bag of broccoli florets, 1 tbsp vegetable oil, and 2 tbsp water into a large skillet over medium heat. Partially cover with lid. Stir the broccoli frequently until bright green then remove from the pan.
- Put 1 (10 oz) bag of Beyond Beef Steak pieces into the same skillet with 1 tbsp vegetable oil. Stir frequently until lightly browned.
- Add prepared sauce and let simmer for 3-4 minutes. Once thickened, add the broccoli and stir to combine.
- Serve over white rice and sprinkle with sesame seeds if you’d like.
Recipe Notes:
- Rice – I just use Minute Rice, keeps it easy.
- Broccoli – If you don’t want to buy the broccoli already in florets, measure out 6 cups or 1 lb.
- Sauce – Once the dish is fully prepared in the skillet, you can add 1-2 tbsp additional water to thin the sauce if you’d like.
- Amino acids – You could substitute with soy sauce.
