Gingerbread Bars with Cream Cheese Frosting
I have a new obsession with oversized sweatshirts. I’ve never been a huge fan of hoodies, so they are perfect for me. I still feel warm and snuggly without feeling like I am being choked.
I recently found the cutest pink Christmas themed oversized sweatshirt and I can’t stop wearing it! I am pretty sure they were trying to sell it as an ‘ugly sweater,’ but I love it! My plan is to just go along calling it that so in case people assume that’s what it is, we’re on the same page. But really, it’s too cute to be ugly so I’m wearing it all through the season!
I cannot believe Christmas is coming! Truthfully, my excitement is more over the traditions we’ve made than anything else… like Hot Cocoa while we are at the parade, putting up the decorations, Christmas caroling, Egg Nog, and Christmas movies! Oh, and we can’t forget about the Christmas baking! These Gingerbread Cookie Bars are delicious and my Mom’s famous Soft Christmas Cutout Sugar Cookies are always a hit!
What You’ll Need for the Cookie Bars:
- 2 cups + 2 tbsp Flour
- 1 1/2 tsp Ginger
- 1 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/4 tsp Cloves
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 3/4 cup Butter, Melted & Cooled Slightly
- 1 cup Brown Sugar
- 1/4 cup Molasses, Unsulphured
- 1 Egg
- 2 tsp Vanilla
And for the Cream Cheese Frosting:
- 1/2 cup Butter, Softened
- 1 (8 oz) package Cream Cheese, Softened
- 2 1/2 cups Powdered Sugar
- 1/2 tsp Vanilla
How to Make Gingerbread Cookie Bars
- Preheat oven at 350 degrees. Spray 9 x 13 pan with cooking spray and set aside.
- In a medium size bowl whisk together 2 cups + 2 tbsp flour, 1 1/2 tsp ginger, 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp cloves, 1 tsp baking soda, and 1/2 tsp salt.
- In a separate bowl, cream together 3/4 cup melted & slightly cooled butter, 1 cup brown sugar, and 1/4 cup molasses until well combined.
- Mix in 1 egg and 2 tsp vanilla.
- With mixer set on low speed, slowly add flour mixture into the wet mixture and mix until combined.
- Pour dough into prepared pan and spread into an even layer.
- Bake for 14-17 minutes.
- Make frosting by beating together 1/2 cup softened butter and 1 (8 oz) package softened cream cheese. Add in 2 1/2 cups powdered sugar and 1/2 tsp vanilla. Beat until fluffy.
- Once the bars are cooled, spread icing over the bars. If decorating, cut into bar shapes before decorating.
Recipe Notes:
- Spices – All spices should be ground.
- Baking time – Be sure not to over bake. If you do, the bars will be hard and dry.
- Decorating – If you are decorating similar to the pictures, with candy in the center of the bars, then be sure to cut into bars first so you can center the candy easily.
