No Bake Avalanche Cookies with Rice Krispies
There are two Disney characters that I can easily, and without shame, identify with: Mater (from Cars) and Dory (from Finding Nemo/Dory).
Mater is loyal, deflects negativity/conflict, and treasures his dents. That’s me!
Dory is cheerful, determined, and forgetful. Very forgetful. That’s also me! Hey, anyone (or fish) with the motto of ‘just keep swimming’ is my kind of person. So regardless of her forgetfulness, I consider it a compliment!
I put a lot of effort into planning ahead and being organized. I really need to write things down, because I enter the danger zone if I don’t. That means the chances of forgetting what I forgot to write down are pretty high!
These No Bake Avalanche Cookies are a forgetful person’s dream come true! They are super easy to make and taste amazing!! They taste like a Reese’s Peanut Butter Cup with white chocolate, which happen to be one of our favorite candies!
By now you know that I love myself a quick and easy no bake recipe. Not only that, but I love it when a recipe doesn’t have to look perfect, either. You can just glob these beauties onto parchment paper and call it a day!

What You’ll Need:
- 2 cups Rice Krispies Cereal
- 1 cup Mini-Marshmallows
- 2 cups (1 bag) White Chocolate Chips
- 1/2 cup Creamy Peanut Butter
- Optional: Mini-Chocolate Chips
How to Make No Bake Avalanche Cookies
- Line a baking sheet with parchment paper. Set aside.
- Mix 2 cups Rice Krispies cereal and 1 cup mini-marshmallows in a large bowl. Set aside.
- Melt 2 cups (1 bag) white chocolate chips and 1/2 cup creamy peanut butter together over low heat. Stir constantly.
- Once melted together, pour over Rice Krispies/marshmallow mixture. Mix until well combined.
- Drop mixture in spoonfuls onto baking sheet.
- Optional: Sprinkle with mini-chocolate chips if desired.
- Let sit until firm.

- Chocolate chips – If you aren’t crazy about the look, taste, or texture of the mini-chocolate chips you can skip garnishing with them.
- White chocolate chips – I highly recommend using Hersey’s white chocolate chips for this recipe because they are so smooth and creamy when it’s melted!
- Peanut butter – You could add more crunch by using crunchy peanut butter instead of creamy.
- Peanuts – Or, you can stir in peanuts for big crunch!
- Mix-in’s & toppings – Alternate mix-in’s and/or toppings could be mini-candies, crushed nuts, or sprinkles!
