Easy No Bake Avalanche Cookies Recipe!
There are two Disney characters that I can easily, and without shame, identify with: Mater (from Cars) and Dory (from Finding Nemo/Dory).
Mater is fun, loyal, optimistic, deflects negativity/conflict, not the smartest car, but has a big heart, and he treasures his dents. That’s me!
Dory is cheerful, determined, excitable, sometimes annoying, and forgetful. That’s also me! Hey, anyone (or fish) with the life motto of ‘just keep swimming’ is my kind of person.
These No Bake Avalanche Cookies are a forgetful person’s dream come true! They are super easy to make and taste amazing! They taste like a crispy Reese’s Peanut Butter Cup with white chocolate, which happen to be one of our favorite candies!
By now you know that I love myself a quick and easy recipe. Not only that, but I love it when a recipe doesn’t have to look perfect, either. You can just glob these beauties onto parchment paper and call it a day!
Why this Recipe Works:
- Melted Base Holds Everything Together – The white chocolate and peanut butter melt into a smooth mixture that acts as the ‘glue.’ As it cools, it firms up and holds all the mix-ins in place – no baking needed.
- No Bake Setting Magic – The mixture naturally sets at room temperature or in the fridge as the chocolate cools. This replaces the need for eggs or flour for structure.
- Sweet and Salty Balance – The peanut butter cuts through the sweetness of the white chocolate.
- Simple and Foolproof – My favorite thing about this recipe is no oven, no complicated steps – just melt, mix, scoop, and set!
Ingredients You’ll Need:
- 2 cups Rice Krispies Cereal – Adds a light, crispy crunch and structure, giving the cookies their signature texture.
- 1 cup Mini-Marshmallows – Brings softness and chew while adding a bit of sweetness and contrast to the crispy cereal.
- 2 cups White Chocolate Chips – Melt down to create the creamy base that holds everything together as it sets.
- 1/2 cup Creamy Peanut Butter – Adds richness and a slightly salty flavor that balances the sweetness of the white chocolate.
- Mini-Chocolate Chips (Optional) – Provides extra bursts of chocolate flavor and a bit of texture throughout the cookies.
How to Make No Bake Avalanche Cookies
NOTE: Alternatively, you can make Avalanche Bars.
- Line a baking sheet with parchment paper. Set aside.
- Mix 2 cups Rice Krispies cereal and 1 cup mini-marshmallows in a large bowl. Set aside.
- Melt 2 cups white chocolate chips and 1/2 cup creamy peanut butter together over low heat. Stir constantly.
- Once melted together, pour over Rice Krispies/marshmallow mixture. Mix until well combined.
- Drop mixture in spoonful’s onto baking sheet.
- Optional: Sprinkle with mini-chocolate chips if desired.
- Let sit until firm.
My Best Tips:
- Mini-Chocolate Chips Are Optional – If you aren’t crazy about the look, taste, or texture of the mini-chocolate chips you can skip garnishing with them.
- White Chocolate Chips – I highly recommend using Hersey’s white chocolate chips for this recipe because they are so smooth and creamy when melted!
- Creamy or Crunchy Peanut Butter Works – You could add more crunch by using crunchy peanut butter instead of creamy.
- Mix-In’s & Toppings – Alternate mix-in’s and/or toppings could be mini-candies, chopped nuts, or sprinkles!
