Healthy Peanut Butter Breakfast Cookies
I was supposed to quit my ‘normal’ job in February, but got scared and didn’t actually follow through with it until June. I finally forced myself to make things final so there was no turning back. But, by delaying my quit date I ended up starting self-employment the same time my son was done with school for the summer. This meant I was now newly self-employed and a first time stay-at-home Mom.
I agonized over the conflict I felt between making sure my business wasn’t a flop and spending time with my son. When I was working, I felt guilty for not spending time with my son. When I was spending time with him, I felt guilty for not working on my business.
I constantly felt agony over how I was spending my time. Every single day I beat myself up for falling short. I was exhausted, irritable, constantly in a rush, I neglected my health, and I was overwhelmed. Every night I went to bed I promised myself I would do better the next day. The next day would come, I’d look at my to-do list, want to cry, and keep running on my hamster wheel.
I literally sucked the joy out of everything because of what I put on my to-do list. I had given myself such high expectations that were impossible to meet. So of course I was going to feel like a failure.
Toward the end of the summer I just about had a panic attack. I really leaned hard into prayer and I slowly started to hear ‘simplify.’ I had fooled myself into thinking more was better, I never thought of doing less. That sounded counterproductive.
Out of desperation, I cleared my to-do list and left one thing on it. I did that one thing and had more time then I knew what to do with! I quickly discovered that focusing on one thing, and doing it well, paid off way more than starting a whole bunch of things and scrambling to finish all of them. Scaling back my to-do list turned out to be the best thing that ever happened to managing my time!
As time went on, I started adding a few things back to my day that I knew for certain I could get done. I put the things on my list that absolutely have to get done that day, like appointments, then I realistically add things from there. Doing less has proven to accomplish so much more!
Fast forward a year, and I really have a great schedule now. It took a lot of trial, error, and discipline to get here (and I hired help)! It’s okay not to get everything done in one day, it’s better that way!

What You’ll Need:
- 2 Overripe Bananas
- 1 cup Peanut Butter
- 1/4 cup Maple Syrup
- 1 1/2 tsp Vanilla
- 1 tsp Cinnamon
- 2 cups Old Fashioned Rolled Oats
- 1/4 cup Dates, Chopped
- 1/4 cup Chocolate Chips
How to Make Peanut Butter Oatmeal Breakfast Cookies
- Preheat oven to 325 degrees. Line baking sheet with parchment paper and set aside.
- In a large bowl, mash two overripe bananas.
- Add 1 cup peanut butter, 1/4 cup maple syrup, 1 1/2 tsp vanilla, 1 tsp cinnamon, and 2 cups old-fashioned rolled oats. Mix until well combined.
- Fold in 1/4 cup chopped dates and 1/4 cup chocolate chips.
- Scoop 1/4 cup size balls onto the prepared pan and flatten down slightly.
- Bake for 15 minutes.

Recipe Notes:
- Chocolate Chips – You can easily swap the chopped dates for chocolate chips!
- Mix in’s – Mix in anything you like in place of the dates and chocolate chips. Things like chopped nuts, raisins, or dried fruit would work!

Oh yes, you can skip them altogether if you’d like! Or, you can substitute with additional chocolate chips, nuts, or other diced dry fruit!
