Air Fry Vegetables Recipes
I am a vegetarian who never ate vegetables until recently. I needed something I could eat a ton of without adding to my waist line, so I thought I’d give veggies a try. I was pleasantly surprised! They aren’t as terrible as I thought they were!
I especially like Air Fryer Vegetables. You can season them as you’d like and make them pretty with fancy grill marks! This recipe is so versatile, you can use any root vegetables you’d like!
Vegetables are a great side dish and especially fantastic in the months of August – September, when the Farmer’s Market is overstocked with as many vegetables as possible! You can make veggies as your side dish every day of the week with things like Buttery Garlic Green Beans, Honey Butter Skillet Corn, or Stuffed Zucchini Boats!

What You’ll Need:
- 3 large Carrots
- 3 Potatoes
- 2 Turnips
- 1 medium Zucchini Squash
- 10 Brussel Sprouts
- 1 Onion
- 4 oz Mushrooms, Sliced

How to Make Vegetables in the Air Fryer
- Slice 3 large carrots, 3 potatoes, 2 turnips, 1 medium zucchini squash, and 10 brussel sprouts. Toss in a large bowl with 3 tbsp olive oil.
- Then place on the grill pan in the air fryer at 400 degrees for 5 minutes, then flip and bake for another 5 minutes.
- Grill 1 onion and 4 oz mushrooms separately. Toss after 5 minutes and grill for another 5 minutes.
- After everything is grilled, season vegetables to taste with salt and garlic powder.
