Do you ever stare at your closet waiting for an outfit to jump out at you? I do. My husband calls it the closet stare. I will just stand there and stare… and stare some more… I want to be comfortable and I want to feel good about what I am wearing! I feel like I wear the same thing day after day.
And… I do the same thing with my kitchen cabinets. I plan our meals to avoid the stare down… but sometimes I just don’t feel like making what I had planned. So I’ll look in the kitchen cabinets, refrigerator, or freezer just hoping a different idea will jump out at me!

There is a good chance that you have all of the ingredients for this recipe, which means you won’t have to stare! And if you don’t, get creative! When I find a recipe that I want to make and I don’t have everything I need, I look around to see if there is something I can use in that missing ingredients place. Or, sometimes I will just leave it out.
For example, if you don’t have peanuts or vegan mini-chocolate chips you can leave them out or substitute with dried fruit.
I used to be very rigid when I was in the kitchen. Meaning, I felt like I had to stick to the recipe exactly. I was afraid it wouldn’t turn out. I let that fear of failure hold back my creativity. If you have that same fear of failing at baking, today is the day to let go of it!

I have built more confidence in myself by letting go of thinking that I have to make something exactly the way the recipe says. Use a recipe as a creative kick-start.
Think of it as a taco bar. Make it how you like it. Start with a foundation, like your taco shell and beans, and build from there. Sure you’ll wish you had added a little more of something along the way, or maybe wished you had left something out. But that’s how you learn, by letting go of all expectations and just practice. Just try something new!

Ingredients to Make No Bake Peanut Butter Oat Bars
- Creamy Peanut Butter
- Honey
- Coconut Oil
- Rolled Oats
- Unsalted Peanuts
- Vegan Mini-Chocolate Chips

How to Make No Bake Peanut Butter Oat Bars
- Line a 9 x 13 baking pan with parchment paper. Set aside.
- Put 2 3/4 cups rolled oats and 3/4 cup unsalted peanuts in a bowl. Set aside.
- In a small sauce pan, put 1 cup peanut butter, 1/2 cup honey, and 1/2 cup coconut oil. On low heat stir constantly until melted and well combined.
- Remove from heat and pour over rolled oats and peanut mixture. Stir until well mixed.
- Sprinkle 1/4 cup vegan mini-chocolate chips over the top of the bars.
- Place in refrigerator until firm. Once firm, cut into bars.

Tips for Making No Bake Peanut Butter Oat Bars
- You can cut these bars any size you’d like, big or small.
- I recommend using unsalted peanuts. Using salted makes the bars too salty!
- Add extra crunch by using crunchy peanut butter instead of creamy.
- Use any size chocolate chips that you’d like.
- Swap out the peanut and chocolate chips for dried fruit.
- Do not stir in anything to the mixture that could melt. It will change the color of the bars!

How to Store No Bake Peanut Butter Oat Bars
These bars should be kept covered in the refrigerator. They are easiest to hold and eat when they are firm. When they are left out of the refrigerator they get soft quickly.

I try to keep my recipes simple and easy to follow so that when you look at them you aren’t overwhelmed. I want you to be able to think clearly when you read through them so you have room left to think through how you’d like to do it differently if you don’t like the way I did it!
