A simple and flexible vegetarian breakfast sandwich complimented with a hint of maple flavoring!
My Dad used to make these Vegetarian Breakfast Sandwiches for us all the time when we were kids. He’d make us tator tots to go with them, too! It was his go-to meal when my Mom was at work.
Ingredients Needed for a Vegetarian Breakfast Sandwich
- English Muffin of Choice
- Egg
- Sliced Cheese
- Morningstar Farms Griller
- Ketchup
How to Make a Vegetarian Breakfast Sandwich
- Toast desired number of English muffins and set aside.
- Heat desired number of Morningstar Grillers on medium heat, flipping half way through to evenly grill both sides.
- Fry desired number of eggs over low heat.
- To assemble the sandwich, place the fried egg on top of the toasted English muffin. Then lay a piece of sliced cheese on top so the cheese starts to melt. Place the Griller on top of the cheese and top with the other half of English muffin.
How to Fry an Egg
- Bring a non-stick frying pan to medium heat.
- Crack an egg over the pan. The egg will spread out, but the heat will keep the egg from running too far.
- Cook slowly until the egg whites are set and the yoke starts to thicken. Break the yoke so it runs into the egg white.
- Flip the egg carefully to evenly fry both sides.
- You’ll know when the egg is done by poking the center of it. If the yoke is dark, keep it over the heat until the yoke is light colored. Once it’s light colored, remove from the heat.

- Maple Flavored English Muffin
- Bagel
- Croissant

- Morningstar Farms Sausage Links (Cut in Half)

How to Meal Prep and Freeze Breakfast Sandwiches
- Make desired number of breakfast sandwiches for the coming week. For example, if you are taking these on-the-go Monday thru Friday, make 5 breakfast sandwiches on Sunday. They will keep up to a week in the refrigerator, so there is no need to freeze them if you are using them for the upcoming week.
- If you are making a large batch of these breakfast sandwiches and would like to freeze them, you’ll need to:
- Use the Griller for the meat. It’s firm and freezes the best.
- Wrap each sandwich individually in saran wrap.
- Place sandwiches in freezer friendly bag and seal.
- The sandwiches will stay fresh in the freezer for up to 3 months.

- Morningstar Farms Sausage Patties (Or Other Preferred Morningstar Meat Substitute)
- Sauce of Choice (Example: Ketchup)
Instructions
- Toast desired number of Maple Flavored English Muffins.
- Heat desired number of vegetarian sausage patties over medium heat.
- Fry desired number of eggs over low heat.
- Place egg on half of the toasted muffin, put cheese on top of egg. Place sausage patty on cheese. Top with sauce of choice and cover with the other half of the toasted muffin.
