A simple and flexible vegetarian breakfast sandwich complimented with a hint of maple flavoring!
Easy Breakfast Sandwich
My parents are both medical professionals who dedicated their careers to leadership roles in healthcare. They worked crazy, and long, shifts when I was a kid!
When my Mom was at work and my Dad was home with us one of his go-to dinners was these Vegetarian Breakfast Sandwiches. It’s still one of my favorite meals! He always served them with tator tots. He’d make this meal to perfection, just the way my sisters and I liked it!
We like to use the maple infused English muffin for these, but those aren’t always available. When they aren’t we love using bagels or croissants! These freeze really well, too.

What You’ll Need:
- 2 Maple Flavored English Muffins, Toasted
- 2 Eggs, Fried
- 2 Cheese Slices
- 2 Morningstar Farms Grillers
How to Make a Vegetarian Breakfast Sandwich
- Toast 2 maple flavored English Muffins and set aside.
- Heat 2 Morningstar Grillers over medium heat, flipping half way through to evenly grill both sides.
- Fry 2 eggs over medium heat.
- To assemble the sandwiches, place Griller on the bottom half of the muffin. Then lay the fried egg on top, followed by the cheese. Close the sandwich by placing the remaining muffin on top.
How to Fry an Egg
- Bring a non-stick frying pan to medium heat.
- Crack an egg over the pan. The egg will spread out, but the heat will keep the egg from running too far.
- Cook slowly until the egg whites are set and the yoke starts to thicken. Break the yoke so it runs into the egg white.
- Flip the egg carefully to evenly fry both sides.
- You’ll know when the egg is done by poking the center of it. If the yoke is dark, keep it over the heat until the yoke is light colored. Once it’s light colored, remove from the heat.
Recipe Notes:
- English Muffin – My favorite is the maple flavored, but it’s not always available. Use any kind you’d like! You could also use a bagel or croissant.
- Griller – In place of the Griller, we love using Morningstar Farms Maple Sausage Patties, Links (Cut in half), and Bacon Strips!
- Freezer meal – These work great for meal prepping! Make desired number of sandwiches and wrap each one individually in saran wrap. Then place in a freezer safe bag and seal.
