Healthy Fruit Pizza with Almond Crust
One of the things I love most about my husband is that he makes me laugh. Our son is a chip off his block! Those two tag team against me all the time and most of the time the jokes they crack are at my expense. And yet I still laugh!
Recently I overheard the two of them whispering, clearly devising a plan. As we sat down for supper, my son says, “Dad has something to ask you.” My husband motions for our son to come over to him and whisper in his ear everything he was supposed to say. Right away I knew he was using the soft spot I have for my husband to try and get what he wanted, using key words that are hard to resist. He figured if it was my husband saying it, but in his words, it was a sure win to get what he wanted.
It was a hard ‘no,’ to both of them! To which my husband told our son he warned him would happen. Their strategy was absolutely hilarious, and adorable! I love them to pieces. I never want to know what a day without either of them would be like!

What You’ll Need for the Crust:
- 1 cup Almonds, Grind to Coarse Flour
- 1 cup Rolled Oats, Grind to Coarse Flour
- 1 cup Whole Wheat Pastry Flour
- 1 tsp Cinnamon
- Pinch of Salt
- 1/2 cup Maple Syrup
- 1/2 cup Canola Oil
And the Cream Cheese Spread:
- 8 oz Cream Cheese, Softened
- 2 tbsp Maple Syrup
- Fresh Fruit

How to Make Healthy Fruit Pizza
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- Whisk together 1 cup almonds (grind to coarse flour), 1 cup rolled oats (grind to coarse flour), 1 cup whole wheat pastry flour, 1 tsp cinnamon, and a pinch of salt.
- In a separate bowl, beat together 1/2 cup maple syrup and 1/2 cup canola oil. Add to the dry ingredients and mix until well combined.
- Form into 7 balls. Place on parchment paper and press down evenly to form a flat, round crust. It should look like a large cookie. Transfer to prepared cookie sheet, allowing enough room between the crusts to bake.
- Bake for 10-20 minutes. The crust should be firm and golden brown, but not overdone. Carefully check the crust after 10 minutes by lightly touching the top of the center of the crust to check firmness. Bake for additional time if needed.
- Once cool, make the cream cheese spread by beating together 8 oz softened cream cheese and 2 tbsp maple syrup. Divide and spread evenly between the crusts and top with fresh fruit of choice.
