Easy Homemade Granola
There are two things that contribute to bad decisions in my day… if I go to bed too late or skip breakfast.
I can overcome just about anything that changes the course of my day, like unexpected errands, change in plans, or unplanned to-do’s if I am rested and energized. But if I skip breakfast I am setting myself up for a rough day because I will never feel full the rest of the day!
This Homemade Granola is easy to make and it’s pretty healthy, too! Yes, it has a smidge of brown sugar in it but when you look at the amount of granola this recipe makes it’s pretty minimal.
You can sprinkle this granola on Peach Crisp Overnight Oats, use it in a Strawberry Smoothie Bowl, or stir it into a Healthy Blueberry Yogurt Breakfast Parfait!
What You’ll Need:
- 11 cups Quick Oats
- 2 cups Shredded Coconut
- 2 cups Wheat Germ
- 1 cup Whole Wheat Flour
- 1 tbsp Salt
- 1 cup Mixed Nuts
- 1/2 cup Brown Sugar
- 3/4 cup Coconut Oil, Melted
- 1 cup Water
- 1 cup Honey
- 1 tbsp Vanilla
How to Make Granola
- Preheat oven to 250 degrees. Line baking pan with parchment paper and set aside.
- Combine 11 cups, 2 cups shredded coconut, 2 cups wheat germ, 1 cup whole wheat flour, 1 tbsp salt, and 1 cup mixed nuts.
- In a blender, combine 1/2 cup brown sugar, 3/4 cup melted coconut oil, 1 cup water, 1 cup honey, and 1 tbsp vanilla.
- Add to dry ingredients. Mix well.
- Pour onto parchment paper lined pan and spread evenly.
- Bake for 1 hour or until golden brown. Stir every 20 minutes.
Recipe Notes:
- Small batch – This recipe makes a massive batch of granola. You can easily cut it in half to make a smaller batch.
- Clusters – To make chunky clusters of granola, squeeze small amounts of granola in your hand until firm before baking.
