Healthy Pancakes Without Banana
I first tried these Healthy Pancakes when I attended a Women’s Ministries breakfast at our church. At my first bite I knew I had to have the recipe for them. It turned out the same person who gave me the recipe for Instant Pot Steel Cut Oats made the pancakes! Which made it all the more exciting because I knew they were healthy!
Our family loves this recipe. It’s super easy and the pancakes are always perfectly fluffy! I like to make a big batch and put them in the freezer for the upcoming week. Then we are ready to go for school morning’s. All we do is take what we want out of the bag and put them in the toaster or microwave.
Our favorite way to have them is with peanut butter and applesauce or peanut butter and syrup. If you haven’t tried peanut butter and applesauce on your pancakes, you MUST! It’s the best!

What You’ll Need:
- 1 cup Whole Wheat Flour
- 1 cup White Flour
- 1/2 tsp Salt
- 4 tsp Baking Powder
- 2 tbsp Honey
- 2 tbsp Oil
- 2 cups Unsweetened Vanilla Almond Milk
- 3 tsp Vanilla

How to Make Healthy Pancakes
- Mix 1 cup whole wheat flour, 1 cup white flour, 1/2 tsp salt, and 2 tsp baking powder together in a large bowl.
- Add in 2 tbsp honey, 2 tbsp oil, 2 cups almond milk, and 3 tsp vanilla and mix until well combined.
- Using a 1/4 cup measuring cup, spoon batter onto a skillet over medium heat. Flip pancakes to the other side when the batter starts to bubble.
- When pancakes are done, remove from skillet.
Recipe Notes:
- Big Batch – I like to make a big batch of these pancakes and freeze them to use for school morning’s. Just remove pancakes from the freezer and toast or microwave to thaw!
- Cooling – When my intention is to make a big batch for freezing, I allow the pancakes to cool on a cooling rack before freezing.
- Freezing – These are great to make ahead as a freezer meal and store in a freezer safe bag!
