Easy Sweet Potato and Black Bean Tacos
When I finally made the commitment to living a healthier lifestyle, I knew one of the first things I needed to do was have a plan for when I don’t have it in me to make a healthy choice. Having a healthy choice staring at me and only requiring a few minutes to make has been one of the keys to my success. While I was strong I planned ahead for when I was weak.
My super quick and easy go-to meals have never been healthy. I would overeat because what I was eating didn’t have any fiber or protein, it wasn’t real food. Instead of regretting years of abusing my body, I look at it as a feeling I can recognize and respond to. I felt sluggish, lazy, tired, sore, and gross.
Now that I have detoxed from the junk and garbage I was eating, I can clearly recognize when I feel good. When I consider my food choices I always ask myself, “Will I FEEL good?” “Will it give me FUEL?” “And will I feel FULL?” Before I made the commitment to living a healthier lifestyle, I never ate good food long enough to recognize how great feeling good feels!!
These Sweet Potato and Black Bean Tacos are one of the meals I have in place to take the choice out of it for me. I always have the ingredients I need, and it is this easy to make:
Easily Assemble Sweet Potato and Black Bean Tacos
- Lay out a piece of pita bread.
- Spread hummus on one side.
- Thaw a bag of frozen cubed sweet potatoes in the microwave.
- Open a can of black beans and rinse.
- Fold the pita bread like a taco shell and stuff with sweet potato, black beans, and lettuce.
- Drizzle dressing over taco.
I use pita bread in place of a tortilla shell because it’s higher fiber and has more nutritional value, I like trying different flavors of hummus to change up the flavor, and I use Ranch dressing but you can use whatever you’d like.
I love this meal because it’s quick, easy, and I don’t feel sluggish and slow after I eat it. It makes me feel really good! Another recipe I have relied on to lose weight is Instant Pot Steel Cut Oats, they start my day off right!
What You’ll Need:
- 2 Joseph’s Flax, Oat Bran & Whole Wheat Pita Breads
- 4 tbsp Hummus
- 1/4 cup Black Beans, Rinsed
- 1/4 cup Sweet Potato, Cubed
- Lettuce
- Dressing
How to Make Sweet Potato and Black Bean Tacos

- Repeat until you’ve reached desired number of tacos.
Recipe Notes:
- Sweet Potatoes – You can jazz up the sweet potatoes if you’d like! This recipe is designed to be as quick as possible, so I just eat them as is out of the bag.
- Black Beans – You don’t have to rinse the black beans. I prefer to rinse them to remove the extra salt.
- Temperature – You can eat the tacos with the sweet potato and black beans warm or cold, I like it either way.
- Dressing – You can use any dressing of choice, I prefer vegan or regular Ranch.
- Avocado – Add avocado if you’d like!
