Vegan Brownie Baked Oatmeal with Peanut Butter
I can think of few things that start my day off better than chocolate and peanut butter! Not to mention it’s in the form of an oatmeal square that I can grab to go. These look rich and decadent, but are faintly sweet.
All of us already have so much to do. We just want something in our lives to be easy, anything. We’ll take what we can get, so we’ll skip breakfast – because it’s easy. Trying to put something together while everyone is rushed to get out of the house in the morning is nearly impossible. And planning ahead takes time; time that we often don’t feel like we have.
We tell ourselves we’ll be just fine without breakfast, because we’ll make up for it at lunch. But lunch comes and we’re tired and starving… so we eat one of everything. Then supper comes and we’re still tired and starving… so we swing by the drive-thru because we’re tired and it’s easy.
Because we’re tired today, we don’t feel like preparing for tomorrow. So the cycle repeats itself allllll over again. Can we agree this madness needs to stop? That we are worth more than fast food every day?!

What You’ll Need:
- 2 2/3 cups Mashed Bananas
- 1/3 cup Creamy Peanut Butter
- 1 cup Chocolate Almond Milk
- 1/4 cup Maple Syrup
- 2 1/2 tsp Vanilla
- 3 cups Rolled Oats
- 1/2 cup Cocoa Powder
- Mini-Vegan Chocolate Chips
How to Make Peanut Butter Brownie Oatmeal Breakfast Squares
- Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray.
- Mash enough over ripe bananas to make 2 2/3 cups.
- Combine 2 2/3 cups mashed bananas, 1/3 cup creamy peanut butter, 1 cup chocolate almond milk, 1/4 cup maple syrup, and 2 1/2 tsp vanilla extract. Mix well.
- Add in 3 cups rolled oats and 1/2 cup cocoa powder. Mix well.
- Pour and spread evenly into prepared pan.
- Optional: Sprinkle with desired amount of mini-vegan chocolate chips.
- Bake for 30 minutes. Then turn the oven off and leave the squares in the oven for an additional 20 minutes. Once the 20 minutes is up, remove from the oven and let cool.
- Optional: Once cooled, garnish with a melted drizzle of creamy peanut butter.
Recipe Notes:
- Almond milk – You can easily swap the chocolate almond milk with vanilla.
- Vegan – You don’t have to make this vegan, you can swap the vegan ingredients for dairy ingredients.
- Serving – You can eat these just as they are, or you can put them in a bowl with almond milk!
- Storing – These should be stored in the refrigerator in a sealed container.
- Freezer – You can freeze these in a freezer safe bag or container. I recommend drizzling on the peanut butter after thawing otherwise they will make a mess in the storage bag/container.
