Cucumber Avocado Tomato Salsa
I have avoided avocado my entire life, steered clear of guacamole and anything that came close to it. But it’s been said that we are the sum of those we spend the most time with, and a friend of mine puts avocado in everything. Literally. So I caved into trying it and it wasn’t so bad!
As I have journeyed through weight loss I decided I was going to be more open minded and try new food. I told myself I had to try it first before determining I didn’t like it. I didn’t love avocado right away, it took a few attempts at different ways of eating it. But now I like it and I look for ways to keep it in the rotation! I can’t believe it!
This Cucumber Avocado Salsa is one of the way’s I like to eat it. It tastes so fresh and it’s packed with such great flavor! You can use it as a dip or as a salsa on your tacos, it’s fantastic!

What You’ll Need:
- 1 large Cucumber, Peeled & Diced
- 1 Avocado, Peeled & Diced
- 1 medium Tomato, Seeded & Diced
- 1/4 cup Red Onion, Diced
- 1 tbsp Fresh Cilantro
- 1 clove Garlic, Diced
- 1/4 cup Sour Cream
- 1 1/2 tsp Lemon Juice
- 1 1/2 tsp Lime Juice
- 1/4 tsp Cumin
- 1/4 tsp Salt
How to Make Cucumber Avocado Salsa
- Peel and dice a large cucumber and avocado into small pieces and place into small bowl.
- Dice into small pieces and remove seeds from a medium tomato and add to the bowl.
- Chop 1/4 cup red onion into small pieces and add to the bowl.
- Then add 1 tbsp fresh cilantro, 1 diced garlic clove, 1/4 cup sour cream, 1 1/2 tsp lemon juice, 1 1/2 tsp lime juice, 1/4 tsp cumin, and 1/4 tsp salt and mix together well.
You Might Also Like:
Pro Tip: Leave the avocado pit in the salsa until ready to serve. This prevents the avocado from turning brown!
Recipe Notes:
- Vegan – You can easily swap the sour cream for vegan sour cream.
- Pit – Leaving the pit in the salsa until ready to serve keeps the avocado from turning brown. I have tested this and it works for several days!
- Make ahead – You can make this ahead of time, but for best freshness I wouldn’t make it any sooner than a day before serving.
