A healthy lunch or dinner idea packed with broccoli! This wrap is light, but delicious and filling!
Broccoli Wrap
As I was eating my very favorite side dish, Vegan Broccoli Salad, it occurred to me that it would be great as a wrap, too. So I turned that salad into this Broccoli Salad Wrap! I will turn anything I can into a wrap for our lunches. I even turned Vegetable Pizza into an Easy Vegetable Pizza Wrap and it’s hands down one of the best ideas I’ve ever had. I like trying new ideas, especially when it helps to get rid of leftovers!
This wrap goes good with a side of chips and Cucumber Avocado Salsa, Vegan Potato Salad, or Oven Baked Sweet Potato Fries!
What You’ll Need for the Dressing:
- 3/4 cup Cashews, Soaked
- 1/4 cup Hot Water
- 2 tbsp Maple Syrup
- 2 tbsp Apple Cider Vinegar
- 1/2 tsp Garlic, Minced
- 1/2 tsp Salt
And the Salad:
- 2 Broccoli Crowns, Florets Only
- 1 1/2 cups Red Grapes, Halved
- 1/3 cup Roasted & Salted Almonds, Finely Chopped
- 3/4 cup Red Onion, Diced
- 1/3 cup Dried Cranberries
- Whole Wheat Tortilla Shells
How to Make a Broccoli Salad Wrap
- Place 3/4 cup cashews in a bowl, cover with 1/4 cup hot water and soak for 10 minutes.
- Drain cashews and add to a Vitamix (or high speed blender) with 2 tbsp maple syrup, 2 tbsp apple cider vinegar, 1/2 tsp minced garlic, and 1/2 tsp salt. Blend until smooth and creamy.
- Place finely chopped florets from 2 broccoli crowns, 1 1/2 cups halved red grapes, 1/3 cup finely chopped roasted and salted almonds, 3/4 cup diced red onion, and 1/3 cup dried cranberries in a large bowl.
- Add dressing to the bowl and toss to coat evenly.
- Place salad into the center of whole wheat tortilla shell and roll into a wrap.
Recipe Notes:
- Serving – For a fresh tasting wrap, don’t mix in the dressing until right before serving. This wrap is best served cold.
- Dried cranberries – You can swap with raisins.
