Simple Tofu Scramble
My stubbornness is both a blessing and a curse. It’s a blessing because I thrive when challenged. If someone tells me I can’t do something, you can bet I’ll prove them wrong and do it. I’m stubborn in a way that I won’t give up. I may fail many times or make several mistakes in the process of reaching my goal, but I will get there and accomplish what I’ve set out to do. All because someone told me I couldn’t do it.
But it’s a curse because sometimes it gives me tunnel vision. I can be so set on doing it one way, convinced it’s the right way and it ends up being wrong. There are times I have to be reminded that there is more than one way to get to the same outcome.
I once dropped a dozen eggs because I was too stubborn to accept help. I looked like a balancing act in the circus with bags hooked over my wrists, a jug of water under my arm, a big binder in my hands… and two dozen eggs balancing on the binder.
I could have made two trips or accepted the help, but I was determined to prove I could do it myself. As I pushed the door open with my shoulder a dozen eggs went sliding to the floor. I screamed! It was such a mess! And it could have been easily avoided.
This Simple Tofu Scramble is not only great for vegans, but when you don’t have eggs these work as a great substitute! They go nicely with a slice of my Grandma’s Homemade Oatmeal Bread, you can use them in a Vegetarian Breakfast Sandwich, or have them with a stack of Healthy Pancakes!
What You’ll Need:
- 2 lbs Extra Firm Water-Pack Tofu
- 2-3 Garlic Cloves
- 1 Onion
- 2 tbsp McKay’s Vegan Chicken Seasoning
- 4 tbsp Nutritional Yeast Flakes
- 1/4 tsp Turmeric
- 1 tsp Parsley
- Salt to Taste
How to Make Simple Tofu Scramble
- Drain 2 lbs Extra Firm Water-Pack Tofu. Set aside.
- Crush 2-3 cloves garlic and finely dice 1 onion. Saute.
- Crumble drained tofu into pieces into the same pan as the garlic and onion.
- Stir in 2 tbsp McKay’s vegan chicken seasoning, 4 tbsp nutritional yeast flakes, 1/4 tsp turmeric, 1 tsp parsley, and salt to taste. (Note: I use McKay’s chicken seasoning for ‘chicken-like’ seasoning.)
- Stir gently until desired consistency reached.
