No, I don’t eat fish. So I respond with, “If it had eyeballs or a mother, I don’t eat it!” These Easy Chickpea Patties are a great Friday night ‘fish fry’ substitution.

What You Need to Make Chickpea Patties
- Saltine Crackers
- Chickpeas (Also Known as Garbanzo Beans)
- Onion
- Celery
- Garlic
- Eggs
- Salt
- Oil
How to Make Chickpea Patties
- Crumble 1 sleeve of saltine crackers and pour into a bowl.
- Drain 2 cans of chickpeas (garbanzo beans) and finely chop. Or you can pulse in a food processor. Combine with saltine crackers and set aside.
- Finely chop 1 onion and 3/4 cup celery.
- Mince 1 garlic clove.
- Combine finely chopped onion and celery and minced garlic into a sauce pan. Add a little butter to the sauce pan and saute.
- Once sauteed, pour into the bowl with cracker mixture. Mix until well combined.
- Add 5 eggs and 1 tsp salt. Mix until well combined.
- Form into patties.
- Pour enough oil into sauce pan to cover the bottom of the pan and bring to medium heat.
- Place patties into oil to fry, patting down with back of a spoon.
- The patties are done when golden brown, frying for about 2 minutes on each side.
How to Freeze Chickpea Patties
- After the patties have completely cooled, place in a freezer safe back. They will keep up to 3 months in the freezer.
