Ooey Gooey Cinnabon Cake
As teenagers my sister & I would shop ’till we dropped at our favorite mall – the Mall of America. Shopping was our favorite thing to do together, especially around the holidays. The mall would always be a wonderland, such a nostalgic feeling.
It was on one of those shopping trips that I had my first Cinnabon. We would rotate through our favorite treats – a pretzel & cheese, a Cinnabon, or an Orange Julius smoothie. Remember those?! Times sure have changed.
I will never, ever forget the first bite of Cinnabon I had! The first bite was so ooey and gooey – it was heavenly! This cake tastes exactly like it and it’s so much easier to make. You don’t have to deal with the hassle of making actual cinnamon rolls, you can just make this Cinnabon Cinnamon Roll Cake!
What You’ll Need for the Cake:
- 3 cups Flour
- 1 cup Sugar
- 4 tsp Baking Powder
- 1 1/2 cups Milk
- 2 Eggs
- 2 tsp Vanilla
- 4 tbsp Salted Butter, Melted
For the Cinnamon Sugar Swirl:
- 1 cup Salted Butter, Softened
- 1 cup Brown Sugar
- 1 tbsp Cinnamon
And for the Icing:
- 2 cups Powdered Sugar
- 4-5 tbsp Milk
- 1 tsp Vanilla
How to Make Cinnabon Cinnamon Roll Cake
- Preheat oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray and set aside.
- In a large bowl, mix together 3 cups flour, 1 cup sugar, 4 tsp baking powder, 1 1/2 cups milk, 2 eggs, and 2 tsp vanilla. Once well combined, add in 4 tbsp melted salted butter. Pour batter into the prepared pan.
- Using the same bowl, mix together 1 cup softened salted butter, 1 cup brown sugar, and 1 tbsp cinnamon. Drop evenly over the cake batter and swirl all over the cake with a knife. Note: Using the knife, swirl deep into the batter and up to the edges of the pan to make sure you have good coverage.
- Bake for 25-28 minutes.
- While the cake is baking, make the glaze by whisking together 2 cups of powdered sugar, 4-5 tbsp milk, and 1 tsp vanilla. Whisk until smooth and drizzle over the warm cake.
Recipe Notes & Substitutions:
- Swirling – Using a knife, swirl deep into the batter and up to the edges of the pan to make sure you have good coverage.
- Milk substitute – Soy or almond milk works well in place of the milk.
- Don’t over bake – Check the cake at 25 minutes. A toothpick inserted into the center of the cake should come out clean.
- Drizzle – Drizzling the icing over the warm cake will cause the cake to randomly collapse. That’s okay, it combines beautifully with the cinnamon sugar swirl perfecting the ooey gooey part of the cake!
