Easy Pineapple Orange Cake
My Aunt Joy knows I’ve been on a quest to dig up old recipe treasures, so she made her version of this Pineapple Orange Cake to share with me! I remembered this recipe from my childhood, but had forgotten all about it! Joy’s version is a smidge different – she uses coconut and nuts in her whipped topping. It’s still just as delicious, just a different variation!
This recipe is actually my Nana’s. She made this for us when we spent our summers at the cabin when we were kids. I am so grateful to Joy for bringing back the memory of this delicious cake!
The best way I can think of to describe this cake is comparing it to tasting sunshine in every bite! This cake is very refreshing, it’s not too sweet, and it’s really light – which is perfect for the summer time! This cake doesn’t really look super impressive, but I can guarantee 100% satisfaction at first bite! It’s so good!

What You’ll Need:
- 1 box Yellow Cake Mix
- 1/2 cup Oil
- 1 (11 oz) can Mandarin Oranges + Juice
- 3 Eggs
- 12 oz Cool Whip
- 1 (15 oz) can Crushed Pineapple, Drained
- 1 (3.4 oz) Instant Vanilla Pudding

How to Make Pineapple Orange Cake
- Preheat oven according to the directions on the back of the cake mix box.
- Spray a 9 x 13 pan with non-stick spray and set aside.
- In a large bowl, combine 1 yellow cake mix, 1/2 cup oil, 1 (11 oz) can mandarin oranges + juice, and 3 eggs. Beat together until well combined.
- Bake for the amount of time listed on the back of the cake mix box.
- When the cake is cool, beat together 12 oz Cool Whip (which is 1 (8 oz) container + 1/2 (8 oz) container), 1 (15 oz) can drained crushed pineapple, and 1 (3.4 oz) instant vanilla pudding.
- Spread whipped topping evenly over the cake.
