Old-Fashioned Butterscotch Nut Bars
I used to be a terrible procrastinator. All the way through school and into my 20’s. I found myself feeling like things were constantly an emergency and I was putting people out all the time because of it. I wanted to break the cycle so badly, but I couldn’t change it because I kept making the choice to procrastinate.
One day I found myself in a real mess. I couldn’t go back in time and I couldn’t get through it without suffering embarrassing consequences. I pushed through the pain of resolving it and told myself I would never procrastinate again.
And for the most part I haven’t. Sometimes it’s really tempting, though.
Now that I am on the other side of that terrible habit, it’s easy to reflect back on all of the times I really, really wish I hadn’t. For example, I was the editor of my High School’s school newspaper my senior year. I was thrilled about the opportunity! However, for many years, actually decades, I beat myself up pretty hard about not doing a better job. I procrastinated deadlines which produced weak articles, pictures that weren’t great, and a sinking feeling every month that I could have done better.
I compare me now to me then and I wish I could do it all over! I had the opportunity to catch up with the English teacher who oversaw my position at the time and I profusely apologized to her for not doing a better job. I knew then, and I know now, that I could have really rocked it.
And do you know what she said?! “Oh my goodness, you were just a kid! I forgive you! Don’t worry about!” Her response was a huge gift to me! I finally let it go and I will forever be intentional about doing my best!

What You’ll Need:
- 1 1/2 cups Flour
- 3/4 cup Brown Sugar
- 1/2 cup Butter, Softened + 2 1/2 tbsp Butter
- 16 oz Mixed Nuts
- 1 cup Butterscotch Chips
- 1/2 cup Corn Syrup
How to Make Butterscotch Nut Bars
- Preheat oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray.
- In a small bowl, mix together 1 1/2 cups flour, 3/4 cup brown sugar, and 1/2 cup softened butter with a fork.
- Press together in prepared pan and bake for 10-12 minutes.
- Remove from oven and spread 16 oz mixed nuts over the crust.
- In a sauce pan, melt together 1 cup butterscotch chips and 2 1/2 tbsp butter over low heat, stirring constantly. Remove from heat and add in 1/2 cup corn syrup. Mix together well.
- Pour over nuts evenly and bake for 10 minutes.
- Cool before cutting.
