Moist Banana Cake
Thank you for hanging in there with me and being patient while I work on mastering the art of enticing you with my pictures of food! I’m not where I want to be, but I have certainly come a long way from where I once was!
I recently read, “Flowers need both sun and rain to grow!” I just love that, it’s really stuck with me. It’s so true for everything in our lives!
If your bananas seem to be overripe as fast as mine are, then I think you’ll be happy you were able to to turn them into this delicious Banana Cake! What You’ll Need for the Cake:
- 1 1/2 cups Bananas, Mashed
- 3 cups Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Cinnamon
- 3/4 cup Butter, Softened
- 1 cup Sugar
- 1/2 cup Brown Sugar
- 3 Eggs
- 2 tsp Vanilla
- 1 1/2 cups Buttermilk
And the Cream Cheese Frosting:
- 1 (8 oz) Cream Cheese, Softened
- 1/2 cup Butter, Softened
- 3 cups Powdered Sugar
- 1 tsp Vanilla
How to Make Banana Cake
- Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray and set aside.
- Mash enough bananas to make 1 1/2 cups and set aside.
- In a large bowl, whisk together 3 cups flour, 1 tsp baking powder, 1 tsp baking soda, and 1/2 tsp cinnamon.
- In a separate bowl, beat 3/4 cup softened butter until smooth and creamy. Add 1 cup sugar and 1/2 cup brown sugar and cream together. Add 3 eggs and 2 tsp vanilla and beat until well combined.
- Beat in mashed bananas.
- Mix in dry ingredients and 1 1/2 cups buttermilk with the wet ingredients. Beat until just combined. The batter will be slightly thick and a little lumpy, that’s okay.
- Spread batter evenly into the prepared pan. Bake for 45 minutes, or until a toothpick inserted into the middle comes out clean. (If the top of the cake is browning too quickly, loosely cover with aluminum foil until the cake is done.)
- Allow cake to cool.
- Make the cream cheese frosting by beating together 1 (8 oz) softened cream cheese, 1/2 cup softened butter, 3 cups powdered sugar, and 1 tsp vanilla. Beat until smooth and creamy, then spread evenly over the top of the cake.
