Apple Cider Donut Cake Recipe
My old, but trusty car has been giving me trouble for several weeks. There is only one mechanic I trust in our area and he is always booked quite far in advance. I had them look at it to diagnosis the problem and then had to wait even longer to actually get it in to get it fixed.
The day finally came for it to be fixed… and… it’s worse. They fixed the exhaust leak, but found another problem that can’t be fixed for another week! By fixing the leak it made the other problem worse. The mechanic said it’s like I am running a marathon but breathing through a straw. It takes a really, painfully long time to reach highway speeds. I have a lead foot so it causes me so much anxiety getting on the highway!
But what makes it worse are the impatient drivers behind me! I literally apologize out loud to them and tell them I can’t help it. I wish they could hear me! They tail the back of my car, they swerve back and forth, they wave their arms around, they swear at me, they flip me off, and once they reach the highway they make a point to dramatically drive around me. It’s so humiliating. And it’s so rude of them.
I get it. I am slowing them down. But only by a minute or two. I so badly wish they’d be patient with me! Their impatience just makes it worse for both them and me! After driving my car this way for weeks, it has really increased my empathy for situations that just don’t make sense.
About the only thing that has made any sense is this Apple Cider Donut Cake! It’s so easy to make, not to mention so tender and delicious! What You’ll Need for the Cake:
- 3 cups Flour
- 2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1 tsp Salt
- 1 1/2 tbsp Baking Powder
- 1 1/2 cups Sugar
- 1/2 cup Brown Sugar
- 1 cup Oil
- 3 Eggs
- 1 cup Applesauce
- 1 cup Apple Cider
- 1 tsp Vanilla
And the Cinnamon Sugar Coating:
- 1/4 cup Butter, Melted
- 1/4 cup Sugar
- 2 tsp Cinnamon
How to Make Apple Cider Donut Cake
- Preheat oven to 325 degrees. Spray a bundt pan with non-stick spray and set aside.
- In a medium bowl, whisk together 3 cups flour, 2 tsp cinnamon, 1/4 tsp nutmeg, 1 tsp salt, and 1 1/2 tbsp baking powder.
- In a large bowl, combine 1 1/2 cups sugar, 1/2 cup brown sugar, and 1 cup oil. Beat in 3 eggs until well combined. Add in 1 cup applesauce, 1 cup apple cider, and 1 tsp vanilla.
- Pour dry ingredients into the wet and beat until well combined.
- Pour the batter into the prepared pan and bake for 50 minutes.
- Let the cake cool. In the meantime, mix 1/4 cup sugar and 2 tsp cinnamon.
- Once cooled, coat the cake with 1/4 cup melted butter using a pastry brush. Sprinkle cinnamon sugar mixture on the top and sides of the cake. To coat the sides, fill your hand with the mixture and pat it on the cake.
