Double Chocolate Zucchini Muffins
I like listening to my favorite local Christian radio station (89.5 FM) early in the morning. They always have a relatable morning talk show that aligns with what I need to hear for that day!
This morning they reminded listeners that our feelings are not always the truth. Sometimes we can get so caught up in what we are feeling that it isolates our thoughts and we focus on worrying about things that we can’t change or that don’t really matter.
THAT’S ME! I worry about the silliest things and obsess over them because of a false ‘feeling.’ And I don’t worry about the things I should! Worrying is such a waste of time, I really need to work on doing less of it. The only time my husband is ever right is when he says, “Everything always works out!” And it does!
If you need to eat your feelings, then be sure to make a batch of these Chocolate Zucchini Muffins! They’ll do the trick. And you don’t have to worry if they’ll turn out or not, they are easy to make! So are these Mini-Zucchini Donut Muffins and Zucchini Brownies!
What You’ll Need:
- 2 cups Flour
- 1/2 cup Cocoa Powder
- 1/4 cup White Sugar
- 1/4 cup Brown Sugar
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1 Egg
- 5 tbsp Butter, Melted
- 1 tsp Vanilla
- 1 cup Milk
- 3/4 cup Chocolate Chips
- 1 cup Zucchini, Shredded
How to Make Chocolate Zucchini Muffins
- Preheat oven to 375 degrees. Line a 12-cup muffin pan with muffin liners and set aside.
- In a large bowl, whisk together 2 cups flour, 1/2 cup cocoa powder, 1/4 cup white sugar, 1/4 cup brown sugar, 2 tsp baking powder, and 1 tsp baking soda.
- Add 1 egg, 5 tbsp melted butter, and 1 tsp vanilla and mix. Stir in 1 cup milk. Fold in 3/4 cup chocolate chips and 1 cup shredded zucchini.
- Divide batter evenly between the 12 muffin liners. Sprinkle additional chocolate chips into the top of the batter if desired.
- Bake for 20 minutes.
