Chocolate Mint Brownies with Box Mix
I am still laughing over something our son said to my husband the other day! He said, “Dad, on this episode of Mom exposed, I caught Mom listening to Country music.” When we are in the car together as a family we listen to Christian music. But when I am by myself in the car, sometimes I rock it out and turn it up! I had forgotten to change the station before I turned the car off and was busted.
We had fun with it and I cranked it up! I am pretty sure my son was in a state of shock.
Please tell me I am not the only one that tries to be a good influence in front of their kids, but reverts back to their pre-parenting days and lets their hair down when no one is around?!
Speaking of getting busted, I am pretty sure you’ll get busted eating this entire pan of Mint Brownies after the first bite! The Oreo pieces in the brownie batter combined with the perfect amount of creamy, minty filling and topping with a decadent chocolate ganache will leave you feeling like you’ve have a bite of heaven!

What You’ll Need for the Brownies:
- 1 box Brownie Mix + Ingredients on the Box
- 6 Oreo’s, Finely Chopped
The Frosting:
- 3 oz Cream Cheese, Softened
- 4 tbsp Butter, Softened
- 1 tsp Peppermint Extract
- 2 cups Powdered Sugar
- Green Food Coloring
And the Ganache:
- 1 cup + 2 tbsp Chocolate Chips
- 2/3 cup Heavy Cream
- 1 tbsp Butter
How to Make Mint Brownies
- Preheat oven to 350 degrees. Line a 9 x 9 pan with parchment paper and set aside.
- Make the brownie mix according to the directions on the box. Finely chop 6 Oreo’s and add to the brownie batter.
- Pour batter into the prepared pan and bake according to suggested time on the box.
- When done, remove from the oven and allow to cool for 5 minutes. Then place in the freezer while preparing the frosting.
- Beat together 3 oz softened cream cheese and 4 tbsp softened butter until creamy. Add in 1 tsp peppermint extract and green food coloring. Mix in. Then add 2 cups powdered sugar and beat until smooth and creamy.
- Spread frosting over cooled brownies and return to freezer while preparing the ganache.
- Pour 1 cup + 2 tbsp chocolate chips into a bowl. In a separate bowl, melt together 2/3 cup heavy cream and 1 tbsp butter for 60 seconds in the microwave. Remove from the microwave and stir to combine. Pour over chocolate chips, cover the bowl, and let sit for 5 minutes.
- When the 5 minutes is up, whisk until ganache is formed. Let it sit for 10-15 minutes to thicken. Then remove brownies from the freezer and pour over the frosting layer.
- Let brownies sit at room temperature for 30 minutes. Then refrigerate for 2-3 hours before cutting and serving.
Recipe Notes:
- Green food coloring – It’s up to you how much you use. Start with a few drops and add more depending on how green you like it!
