Easy Mince Pie
When my son was about 3 years old he and my husband came up with a game called ‘Stool Ball.’ They would turn over the kitchen stool and use it like a basketball hoop. Over the years they have added different variations and rules to their game.
The stools were just a formality before our son came along, we never really used them. But has he is growing up he is outgrowing the small stools! We decided to get functional size stools that he could use and listed the old ones on Marketplace.
Oh my goodness, I thought the world was coming to an end when our son found out we were selling them! The same day I listed them I sold them. But I was tearfully convinced that we just couldn’t possibly get rid of those stools. After feeling like I would ruin his childhood if I pursued selling them, I decided to retract the sale and keep them for as long as they continued playing the game.

What You’ll Need to Make the Pie Crust:
- 2 cups Flour
- 1 cup Butter Flavored Crisco
- 1 tsp Salt
- 3-4 tbsp Cold Water
And the Mince Pie Filling:
- 1/2 cup Raisins
- 1/2 cup Dates, Cut Small
- 3 Apples, Diced
- 1 Lemon, Juice + Rind Grated
- 1 medium Orange, Juice + Rind Grated
- 1/2 cup Walnuts, Chopped
- 1 cup Honey
- 3 tbsp Flour

How to Make the Pie Crust
- Preheat oven to 400 degrees.
- Combine 2 cups flour, 1 cup butter flavored Crisco, and 1 tsp salt.
- Gently stir in 3-4 tbsp cold water.
- Divide mixture in half. Place first half on well floured surface and roll out with a rolling pin. Lightly place into a pie pan and gently press to form.
- Place second half of mixture on well floured surface and roll out with a rolling pin. Set aside.
How to Make Mince Pie Filling
- In a medium size bowl, mix together 1/2 cup raisins, 1/2 cup finely cut dates, 3 diced apples, 1 lemon (juice + rind grated), 1 medium orange (juice + rind grated), 1/2 chopped walnuts, 1 cup honey, and 3 tbsp flour.
- Pour mixture into prepared pie pan. Wet edges of the pie dough with water.
- Place remaining half of rolled pie dough over the mince mixture and pinch dough edges together.
- Make slits in top of pie with a butter knife.
- Bake at 400 degrees for 20 minutes. Reduce oven temperature to 375 degrees and continue to bake for 25 minutes.
