Easy Blueberry Pie Recipe
I buy gobs of locally grown blueberries every year. We eat them fresh and I love to bake with them! Blueberries are super easy to bake with. You don’t have to pit, peel, or slice them – just toss them in! Knowing that, it makes the idea of making a Blueberry Pie sound a lot easier.
The cinnamon and lemon in this pie compliment each slice so nicely, especially with a scoop of vanilla ice cream! And when blueberries aren’t in season, frozen blueberries work just as good!

What You’ll Need to Make the Pie Crust:
- 2 cups Flour
- 3/4 cup Butter Flavored Crisco
- 1 tsp Salt
- 4 tbsp Cold Water
And the Blueberry Pie Filling:
- 4 cups Blueberries
- 5 tbsp Flour
- 3/4 cup Sugar
- 1/2 tsp Cinnamon
- 1 tbsp Lemon Juice
- 1 tbsp Butter
- 1/4 cup Water

How to Make the Pie Crust
- Preheat the oven to 400 degrees.
- Combine 2 cups flour, 3/4 cup butter flavored Crisco, and 1 tsp salt.
- Gently stir in 4 tbsp cold water.
- Divide mixture in half. Place first half on well floured surface and roll out with a rolling pin. Lightly place into a pie pan and gently press to form.
- Place second half of mixture on well floured surface and roll out with a rolling pin. Set aside.
How to Make Blueberry Pie Filling
- In a sauce pan over medium heat, combine 4 cups blueberries, 5 tbsp flour, 3/4 cup sugar, 1/2 tsp cinnamon, 1 tbsp lemon juice, 1 tbsp butter, and 1/4 cup water.
- Stir frequently until thickened.
- Pour blueberry mixture into prepared pie pan. Wet edges of the pie dough with water.
- Place remaining half of rolled pie dough over the blueberries and pinch dough edges together. Trim off extra.
- Make slits in top of pie with a butter knife.
- Bake at 400 degrees for 20 minutes. Reduce oven temperature to 350 degrees and continue to bake for 15-20 minutes.
