My husband and I aren’t able to check in with each other throughout the day. He drives the city bus and doesn’t have access to his phone, so we go most days without talking to each other until we see each other at home. And we can’t get to the good stuff until our son goes to bed, so some days we wait a looooong time to really talk to each other.
Recently he called me out of the blue and asked me what I was doing for lunch. He had a quick break and wanted to spend it with me! We went to a cute little cafe where I had the best Pumpkin Spice Chai that I’ve ever had in my life, we talked, laughed, shared a huge chocolate chip cookie, and had a fabulous time! It felt like we were dating again. We were long overdue for some time out, alone!
Speaking of being alone. Don’t put me in a room alone with this Pecan Pie – one of us isn’t going to make it out alive and it’s not me!
What You Need to Make a Flaky Pie Crust
- Flour
- Salt
- Butter Flavored Crisco
- Cold Water
How to Make a Flaky Pie Crust
- Combine 2 cups flour, 1 tsp salt, and 1 cup butter flavored Crisco.
- When well mixed, add 3 tbsp cold water and gently stir.
- Divide mixture in half. Roll each half out on floured surface.
- Note: Cut this recipe in half for a Pecan Pie. Leave as is for a pie that requires a pie crust on top.
What You Need to Make an Easy Pecan Pie
- Flour
- Salt
- Butter Flavored Crisco
- Cold Water
- Eggs
- Corn Syrup
- Sugar
- Butter
- Vanilla
- Pecan Halves
How to Easily Make a Pecan Pie
- Preheat oven to 350 degrees.
- Make a pie crust by combining 1 cup flour, 1/2 tsp salt, and 1/2 cup butter flavored Crisco.
- When well mixed, add 1 1/2 tbsp cold water and gently stir.
- Roll out on floured surface and place in pie pan.
- Combine 4 slightly beaten eggs, 1 cup corn syrup, 2/3 cup sugar, 1/3 cup melted butter, and 1 tsp vanilla.
- Mix well. Stir in 1 1/4 cups pecan halves.
- Pour mixture into prepared pie crust and bake for 45-50 minutes.

- 1/2 cup Butter Flavored Crisco

Pecan Pie Filling
- 4 Eggs, Slightly Beaten
- 1 cup Corn Syrup
- 2/3 cup Sugar
- 1/3 cup Butter, Melted
- 1 tsp Vanilla
- 1 1/4 cup Pecan Halves
