3-Ingredient Mini-S’mores Pie
The best childhood memories I have were made at our cabin on the lake. It was a small cabin that I am certain would fail an inspection, but nevertheless it was the best place on earth. From sun up to sun down we’d be in the lake. We spent so much time outside that our bodies just knew what time it was without looking at the time! When it was mealtime we’d run up to the cabin soaking wet wrapped in towels, inhale our food, and run back to the lake as fast as we could.
On cold or rainy days we’d bike the long gravel road to the local gas station and rent a VHS, play in the playhouse and make mud pies, play cards with Grandma, and have s’mores over a bonfire at night.
My childhood was simple. And I am doing my very best to make sure our son has a simple childhood, too. That’s why I love fun, super easy ideas like these S’mores Mini-Pudding Pies! Summertime just isn’t complete with out s’mores! They don’t have to be made over bonfire, you can make them in the form of S’mores Candy Bites, Golden Graham S’mores Bars, or Peanut Butter S’mores Cookie Cups!
What You’ll Need:
- 4 Mini-Graham Cracker Crusts
- 4 pack Jello Chocolate Pudding
- Mini-Marshmallows
How to Make S’mores Mini-Pudding Pies
- Open the package of mini-pie crusts and distribute on the counter so they are ready for the pudding.
- Scoop 1 pudding cup into 1 mini-pie crust. Repeat until you’ve reached desired number of pies.
- Sprinkle mini-marshmallows on top of each pie.
Tips:
- Broil – To make these look authentic, you could place them in the oven and broil them for a minute or two. Note: Watch them the entire time, it doesn’t take long to broil the marshmallows!
- Extra yummy – You could get fancy and drizzle the pies with chocolate syrup, caramel sauce, or peanut butter sauce. Or you could sprinkle a few mini-chocolate chips and/or graham cracker crumbs on top.
- Pudding – If you’d like to make the pudding instead, use 1 1/2 cups milk to 1 (3.4 oz) box Jello pudding instead of the 2 cups called for. Once made, immediately divide between the pie crusts.
- Make ahead – You can make these a day ahead, just be sure to keep refrigerated and sprinkle the marshmallows on right before serving.
- Serving size – Make any amount you’d like. Pudding cups come in a 4 pack and mini-graham cracker crusts come in a 6 pack, so adjust accordingly for how many you need!
