Easy Pecan Patties
I am really, really blessed with a great husband who is also a great father to our son. There are days when I give my husband the look and he knows I could use some quiet time so he and Riley will find something to do. They will go shopping, go play pool, play basketball, go fishing, play catch with a football in the yard, and most recently they went golfing.
My husband could take the easy way out and just watch TV with him, but he doesn’t and I love him so very much for making an effort to spend time with him!
This recipe for Vegetarian Pecan Patties don’t require much effort and pair nicely with a scoop of the Best Homemade Mashed Potatoes and Easy Garlic Knots! You could also serve them up quickly as a burger. And they freeze easily to keep for another day!
What You’ll Need:
- 3 cups (2 Rows) Saltine Cracker Crumbs
- 1 1/2 cups Colby Cheese, Shredded
- 1 1/2 cups Pecan Meal
- 3/4 cup Onion, Chopped
- 8 Eggs
- 3 cloves Garlic, Minced
- 1 1/2 tbsp Wheat Germ
- 1 1/2 tsp Sage
- 3 tbsp Oil
- 1 1/2 tbsp McKay’s Beef Seasoning
How to Make Vegetarian Pecan Patties
- Cover the bottom of a skillet with oil and heat over medium/high heat until ready to fry patties.
- Mix together 3 cups (2 rows) saltine cracker crumbs, 1 1/2 cups shredded colby cheese, 1 1/2 cups pecan meal, 3/4 cup chopped onion, 8 eggs, 3 cloves minced garlic, 1 1/2 tbsp wheat germ, 1 1/2 tsp sage, 3 tbsp oil, and 1 1/2 tbsp McKay’s beef seasoning in a large bowl.
- Form mixture into patties and place into hot oil. Fry on both sides until golden brown.
Recipe Notes:
- Serving – You can serve as a burger or with gravy.
- Freezing – Easily freeze these, without gravy, by placing in a freezer safe bag.
- Gravy – If using gravy, I just use the vegetarian brown gravy from my local grocery store. If you can’t find any, check the ingredients on the gluten-free gravy packet, it’s usually vegetarian.
