Baked Sweet Potato Casserole
I love, love, loooooove sweet potatoes – especially in the form of this Sweet Potato Casserole! This dish is the perfect compliment to Thanksgiving dinner. It’s a mix between traditional and a twist on a classic recipe. It’s perfect topping brings out a sweetness that makes it dessert-like, so the kids will even like it! Everyone will be asking you to pass it around the table for seconds!

What You’ll Need for the Sweet Potatoes:
- 5 large Sweet Potatoes
- 3 Eggs
- 1/2 cup Evaporated Milk
- 1 tsp Vanilla
- 1/2 cup Sugar
- 1/2 tsp Salt
- 1/4 cup Butter, Melted
And the Topping:
- 1/4 cup Flour
- 1 cup Brown Sugar
- 1 cup Pecans, Chopped
- 3 tbsp Butter, Cold
How to Make Sweet Potato Casserole
- Preheat oven to 350 degrees.
- Place 5 sweet potatoes in a large pot. Add enough water to cover the potatoes a little more than half way. The water won’t completely cover the potatoes.
- Bring the water to a boil, then adjust the heat to simmer until they are fork tender. Be careful not to over cook, you don’t want them to be mushy.
- Drain the water and place the potatoes on a cutting board to cool. Once they are cool enough to touch, peel the skins from the potatoes and place in a large bowl.
- Add 3 eggs, 1/2 cup evaporated milk, 1 tsp vanilla, 1/2 cup sugar, 1/2 tsp salt, and 1/4 cup melted butter and mash everything together with a mixer until smooth.
- Spray a 9 x 13 pan with non-stick spray and transfer the potatoes into the pan.
- Make the topping by combining 1/4 cup flour, 1 cup brown sugar, and 1 cup chopped pecans in a mixing bowl.
- Add 3 tbsp cold butter and cut in with a fork until well combined.
- Sprinkle topping over the sweet potato mixture.
- Bake for 35-40 minutes.
