I envy my husband because he doesn’t worry about anything. It never crosses his mind what other people are thinking and I can’t fathom living like that! I want to be like that but every time I try not to waste energy on what other people think I end up going down a rabbit hole and start worrying even more!
I don’t know where I heard it but it impressed me enough to write it down so I wouldn’t forget it. They said, “Worrying is how some people express love.” That’s me! I don’t want to worry, I don’t mean to, but I do it because I love so deeply!
You don’t have to worry about a thing when you make this Vegetarian Meatloaf! It’s failproof and even the non-vegetarians will love it! For a complete meal, serve it with Honey Butter Skillet Corn and Easy Garlic Knots with a slice of No Bake Cherry Cheesecake Bars for dessert!
What You’ll Need:
- 1 cup Butter
- 8 slices Whole Wheat Brownberry Bread, Cubed
- 1 Onion, Diced
- 4 Eggs
- 1 (15 oz) can Loma Linda Vegetarian Burger
- 1/2 lb Cheddar Cheese, Grated
- 1/2 tsp Garlic Powder
- 1/2 tsp Poultry Seasoning
- 1 cup Ketchup
- 3 tbsp Brown Sugar
How to Make Vegetarian Meatloaf
- Preheat oven to 350 degrees. Spray a 9×13 pan with non-stick spray and set aside.
- Place 1 cup butter and 8 slices of cubed whole wheat Brownberry bread in a frying pan over medium heat and saute until the bread starts browning. Add 1 diced onion and saute with the bread until the onions are translucent.
- Meanwhile, in a medium size bowl, combine 4 eggs, 1 (15 oz) can Loma Linda Vegetarian Burger, 1/2 lb grated cheddar cheese, 1/2 tsp garlic powder, and 1/2 tsp poultry seasoning.
- Once the sauted mixture is done, add to the bowl and mix all ingredients together well.
- Press evenly into prepared pan.
- Bake for 45 minutes.
- As it’s finishing baking in the oven, whisk together 1 cup ketchup and 3 tbsp brown sugar. Spread over loaf evenly while warm and bake for additional 5-10 minutes.
