Vegetarian Meatballs Recipe
I am a life long vegetarian, my husband is not. And we are raising our son to be a vegetarian. My husband only eats meat if we are out to eat, otherwise he eats the vegetarian food I prepare. He doesn’t mind, he likes it! As a matter of fact, he loves these Saucy Vegetarian Meatballs!
They are so easy to make, taste great, and freeze for another day! If you are looking for a complete vegetarian meal idea, you can serve these with the Best Mashed Potatoes, Easy Garlic Knots, and Green Beans!

What You’ll Need for the Sauce:
- 1 (36 oz) jug of Ketchup
- 36 oz Water
- 2 tsp Lemon Juice
- 1 cup Brown Sugar
- 1/3 cup Molasses
And the Meatballs:
- 1 (12 oz) bag Pepperidge Farm Seasoned Stuffing
- 1 large Onion, Chopped Fine
- 1/2 lb Colby Cheese, Shredded
- 1 cup Pecan Meal
- 2 tbsp McKay’s Beef Seasoning
- 5 Eggs
- 1/2 tsp Garlic Powder
- 1 cup Evaporated Milk

How to Make Saucy Vegetarian Meatballs
- Preheat oven to 350 degrees.
- Using your hands, mix together 1 bag of Pepperidge Farm Seasoned Stuffing, 1 large onion chopped fine, 1/2 lbs shredded Colby cheese, 1 cup Pecan Meal, 2 tbsp McKay’s Beef Seasoning, 5 eggs, 1/2 tsp garlic powder, and 1 cup evaporated milk.
- Pour a little oil in a frying pan, bring to medium heat.
- Form into balls and place into a frying pan; fry on all sides.
- In the meantime combine 1 (36 oz) jug of ketchup, 36 oz water, 2 tsp lemon juice, 1 cup brown sugar, and 1/3 cup molasses in a large sauce pan and bring to a slow boil, just above a simmer for about 20 minutes to thicken. Add meatballs to the boiling sauce.
- Pour the meatballs and sauce into a 9 x 13 baking pan and bake for 30-35 minutes.

Recipe Notes:
- Pecan meal – You can substitute with 1 cup ground walnuts if you’d like.
- Freezing – These meatballs freeze really well. They can be frozen one of two ways: 1) Put the meatballs in a freezer safe bag and allow to thaw before combining with the sauce, or 2) The meatballs can be frozen in the sauce, just allow to thaw before reheating.
